Crock Pot Recipes?

So, I think I have a new infatuation w/ my crock pot.  I have been searching for good recipes all morning. 

What are your favorite recipes?

  • I've only ever done one recipe in the crock pot. Shame on me i know but im hoping to get better with it. I do cabbage rolls in it. I bookmarked this site though and hope to scan through some to pick out new ones to try.

  • Here is one I had in my email (all my other recipes are at home):

    Portugeuse Pork and Potatoes 

    Ingredients:

    Pork cut into cubes (I used a pork roast) or any type of lean pork meat.

    Three packets Goya Spices (comes in yellow, hot pink and orange box) Sazon Goya Con Azafran

    ? cup white onions sliced

    1 cup white wine

    3 gloves garlic crushed

    Salt, pepper, parsley

    Potatoes ? cubed

    1. Marinade the pork cubes in wine, garlic, onions, salt, pepper and 2 packets of the Goya seasoning ? overnight in the fridge.

    2. Put some olive oil in a pan and quickly brown the meat a few pieces at a time (quickly sear it, don?t cook it through) and remove.

    3. Once all meat is browned place in the crock pot (dump in any remaining marinade sauce) and the last package of Goya spice. Add the cubed potatoes.  If you think it needs more liquid add more wine or water.  I added more wine to mine J

    4. Set your crock to cook 6-8 hours (might came out excellent on 6 hours) the meat just fell apart and the potatoes hadn?t turned to mush yet.

  • I found one more that MH really likes:

    Honey Rosemary Chicken w/ Potatoes

    Makes 6 servings (I think it makes more because I can only eat 1 chicken thigh myself)
     
    Ingredients:
    12 skinless bone-in chicken thighs (about 5 pounds)
    1 tablespoon vegetable oil
    1 pound baby Yukon Gold potatoes
    2 medium onions, cut into thin wedges
    4 garlic cloves, minced
    1/4 cup honey
    2 tablespoons fresh lemon juice
    2 tablespoons cornstarch
    1 tablespoon coarsely chopped fresh rosemary, plus sprigs for garnish
    1 teaspoon salt
    1/4 teaspoon freshly ground pepper
     
    Directions:
    1. Rinse chicken and pat dry. Heat oil in a large nonstick skillet over moderately high heat. Add chicken and cook, turning, until browned on all sides, about 8 minutes.
    2. Place the potatoes, onion, and garlic in a 4 to 6 quart slow cooker; top with chicken.
    3. Stir together honey, juice, cornstarch, rosemary, salt, and pepper in a small bowl. Pour over chicken. Cover and cook, 6 to 8 hours on low or 3 to 4 hours on high. Serve garnished with rosemary sprigs, if desired.
     
    Notes: I think this recipe makes a TON of chicken so we only used 6 or 7 chicken thighs last time but left all the other ingredients as listed except for the rosemary. You will need to half the rosemary if you don't make all the chicken. I also didn't use fresh rosemary but instead used dried rosemary and it worked just fine. Put potatoes in 1/2 way through if you don't like them mushy.

    I haven't been able to perfect it with only half the recipe yet but with the notes at the bottom it came out the best. Unless you want to make it all at one time then it should come out great!

    This one is a keeper too.  I love when there is almost no prep beforehand, you just throw everything together & cook and then assemble when it's done.

  • That's why I love it so much.  I should add that I usually only use two chicken breasts.  Three makes it too meaty and not enough liquid.
