Re: Pumpkin ravioli?
I first had it at Wolfgang's about 7 years ago and it's a dish I remember to this day. Absolutely incredible. I am still trying to perfectly replicate the recipe. I use a cross between Wolfgang's and Giada's (you can find them easily by googling). But instead of hazelnuts, I use pine nuts. They both incorporate sage, which I like to keep to a minimum in mine. (very finely shredded, too chunky pieces overpower the dish). But it's really something you have to play around with to get it where you like it.
I also am trying to re-create this amazing pumpkin and lump crab soup I used to get at a restaurant in Palm Beach. To die for! I freaking love pumpkin!!!

Pumpkin is one of the best things on the planet. I love all things pumpkin. It's what makes the end of summer bearable.
Do you make the ravioli itself or do you buy it and stuff it?
