Zucchini Sticks

Saw this on another board, thought I'd share.  I'm hoping david will try these, DH too.  He is weird about vegetables that are unknow to him (although zucchini isn't really odd, it is to him). 

 

1 pound zucchini

1/2 cup Bread crumbs

1/2 cup parmigiano reggiano, grated

1 t dried oregano leaves, crushed

1 egg

Salt and pepper to taste

 

INSTRUCTIONS

Preheat oven to 425 degrees

Slice zucchini into even sticks, season with salt and pepper, set aside.

Combine bread crumbs, parmigiano reggiano and oregano in a bowl.

Beat egg in a separate bowl.

Dip zucchini into egg and then dredge in the bread crumb mixture. Place the zucchini on a baking sheet in a single layer with the skin side down

Bake until golden brown, about 20-25 minutes (at least, but we like our stuff crunchier)

  • That sounds so good! Let us know how they turn out.
  • I made something almost exactly like this but they were chips (breaded like this right down to the parmigiano reggiano!)  It recommended putting them on a wire rack (like you'd use to cool baked goods) over a pan so the air could circulate under it.  Worked pretty well. Or you could try lining the baking sheet with parchment paper?

    Our "chips" never really got very crunchy since zucchini is such a wet vegetable, but they were GOOD.  Let me know how they turn out!

  • I love zucchini so I should try these! I was watching Rachel Ray the other day and she suggested doing it with carrots and green peppers too.

  • I don't know how carrots would turn out, just because they are so hard when they are raw, green peppeers and egg plant would probably work too.

    I wouldn't be making these until the weekend though.  (I try to avoid the grocery store for small purchases, I like going once a week with DH because there are nothing but Polish woman who think I am Polish.  Theythen when they ask me something in Polish.  More likely than not, I understand what they are asking but answer them in English.  They get so confused and say, oh I thought you were Polish. I say no, and then they ask how I understand and I get to tell them my relationship to DH.

  • I just ran to Target to pick up more formula and bought some zucchini so I might try this recipe tonight or tomorrow. If I do I'll let you know how it turns out.
