This is what we had for dinner last night (YUM!) Now I know that I've touted the great pumpkin shortage of 2009, but when I went grocery shopping this past weekend, there was A BIG display at a store that was previously sold out.
Protein-Packed Pumpkin Pancakes
These were very easy to make, quick, and tasted like pumpkin pie almost! They were a bit gooey-er than our normal pancakes (which is basically the same recipe as this minus the pumpkin), but that kind of lended to the "pumpkin pie" feel.
I did add a little Splenda (because in my experience with our other non-pumpkin recipe like this, I can taste the saltiness of the cottage cheese otherwise) as well as about doubled the pumpkin pie spice. We followed the blog's recommendation of serving with syrup and whipped topping (we used sugar free Log Cabin and Redi Whip FF). OMG, YUM.
