need salad inspiration

What's your favorite "exciting" salad recipe?  I'm going shopping tonight and want to eat some salads this week but can't handle the idea of boring iceberg lettuce and tomatoes. I was thinking of doing kind of a greek salad... tomatoes cucumbers green peppers and feta.  I'm very open to other ideas though.  I'm trying to get back on the healthy eating track.

  • Iceberg is blah, Romain is better (and spinach is even better though I don't really like it).

    We make a simple one with romain, mozz cheese, mandarin oranges, crutons, and Italian dressing.

    There is a salad at the Outback that I like a lot: lettice, tomatoes, eggs, almonds, cheese, bacon, chicken salad. For a salad it is quite filling.

  • Although it isn't the healthiest salad, this is one I've been loving lately.  The salad is lettuce, pears, blue cheese, green onions and pecans cooked with some sugar.  The dressing is the best part:

    1/3 cup olive oil 3 tablespoons red wine vinegar 1 1/2 teaspoons white sugar 1 1/2 teaspoons mustard 1 clove garlic 1/2 teaspoon salt black pepper to taste

  • One of my favorites is mixed greens with walnuts, gorgonzola, sliced apples or pears, and a vinaigrette dressing. So good!
  • I buy the spring mix or baby spinach, add cukes, grape tomatoes, peppers, mushrooms... and whatever other veggies I come across... i also add either sliced fruit and nuts (either walnuts, almonds or pecans) and avocado.

    I never use dressing... I know it's strange! I kind of just like vegetables by themselves.

    That dressing sounds good!  I think I've got everything to make it at home.  Maybe if I only put a little bit on I'll be ok Angel

  • I like the spring or mesclun mix for greens, then I add bell peppers, grape tomatoes, and mushrooms and have it with raspberry vinaigrette.  Lately I've also been adding crumbled goat cheese and candied walnuts.  If I want to make a meal of it I'll grill up some marinated flank steak and add that to it.

    This! but I use dried cranberries instead of apples/pears because I am allergic.  I also add grilled chicken to make it a little more filling.

  • Thanks everyone.  I ended up getting cucumber, grape tomatoes, green pepper, crumbled low fat feta, and a couple avocados (they were ripe and on sale -- rare!)  Can't wait for lunch!
