Recipes for egg-free freezable meals?
One of my coworkers is undergoing knee surgery next week, and will be out of commission for a few weeks thereafter... we're hoping to put together a collection of frozen meals to deliver to her, but they need to be egg-free. Any great tried-and-true recipes to recommend?

I have a great recipe for shepherd's pie that would be great to freeze. It has no eggs in it.
5 or 6 potatoes, mashed
2 cans of tomato soup
peas, carrots, corn, green beans
1 lb of ground beef
Brown the ground beef and put it in the casserole dish (or aluminum dish about the size of a casserole dish).
Combine veggies (1-2 cups of each if frozen, or 1 can of each if canned), browned ground beef, and tomato soup until everything is evenly dispersed.
Layer the mashed potatoes on top.
Tell them to let it thaw in the fridge before they cook it so that it cooks the whole way through. Have them set the over at 400 degrees. Cook until the center is warm. Suggest to them that they put it on a tray when they put it in the oven, because if not the tomato soup would boil out.
It is really yummy and great as a leftover as well!
In our freezer, we always seem to have lasagna, homemade meatballs, soups, and chili frozen and they reheat well.
You could also try some chicken casserole dishes for variety.
