recipe for meatballs or Skyline?

I'm looking for something you've actually made or eaten.  A powdered chili mix is OK too (and easier).  I like LaRosa's meatballs but they're so expensive that I'd rather make my own.

  • I just made spagetti meatballs last night :).  This is based on my DH's grandmother's recipe from Sicily.

    INGREDIENTS

    Meatballs
    * 1 ? lbs ground beef or turkey
    * ? lb ground sausage
    * 1 small clove of garlic, minced
    * 1 tsp of salt
    * 2 eggs
    * ? cup Italian breadcrumbs
    * 1 slice stale bread

    Spaghetti Sauce
    * ? cup olive oil
    * 1 small onion, diced
    * 2 cloves garlic, minced
    * ? cup of sugar
    * ? tsp dried basil
    * ? tsp dried oregano
    * ? tsp dried bay leaf
    * 1 tsp salt
    * ? tsp cracked red pepper (or to taste)
    * ? cup romano or parmesan cheese
    * Ground black pepper, to taste
    * 1 large can (12 oz) tomato paste
    * 36 oz water
    * 1 large can (29 oz) tomato sauce

    DIRECTIONS

    1. In a sauce pan and olive oil and saut? all spaghetti sauce ingredients except for tomato paste, tomato sauce, and water.  Saut? until soft.  (Note: If cheese makes mixture form a large clump, don't worry - it will dissolve by the time the sauce is done simmering.)
    2. Add large (12 oz) can of tomato paste.  Use tomato paste can to add 3 cans of water.
    3. Add large (29 oz) can of tomato sauce.
    4. Reduce heat to a simmer.
    5. While the sauce is beginning to simmer, prepare the meatballs.  In a large mixing bowl, combine all meatball ingredients until well mixed.  Using hands, shape into 1.5" diameter balls by rolling gently between hands.  Put raw meatballs into sauce and repeat until all balls are formed.
    6. Let simmer on low heat for 3 hours, stirring occasionally.  Skim off fat as needed.
  • For skyline I use the powder mix, "Cincinnati Chili" is the name I think, The package is blue. I put the meat through the food processor to make it real fine, super easy and yummy.
  • I think I have used that blue envelope.  DH wants me to make some Cincy chili-I'm like why not just go to skyline??

    because it is not the best cincinnati chili. also, making it yourself is fun!

  • I make homemade meatballs all the time!  I don't have exact recipe measurements, just mix together ground beef, italian style bread crumbs, one egg, garlic, parmesean cheese. I brown them in a skillet with onions, then the thing that makes them amazing, is I put them in the crockpot in the sauce and cook them ALL DAY LONG! Usually cook from 6:30am until dinner time. The all day crock pot simmer makes them so tender, plus very easy!

  • About the chili-I saw Gold Star mix at Kroger today.  It used to have MSG so I never bought it.  Ewww, that's some nasty chili and I made a double batch!!  It tastes nothing like Gold Star!  At least dh likes it, I'll freeze it and he can eat it all winter.
