Top 5 Weeknight Dinners

I don't feel like going through all the blogs I normally go through in order to figure out next week's meals.  So what are your top 5 weeknight dinners?

  • Turkey tacos are almost a weekly thing at our house. 

    I also make chicken stir fry w/ veggies and either brown rice or barley quite often. 

    It sounds difficult but it's super easy and quick to make, baked salmon and some veggies and a salad or potatoes

    I also make all sorts of baked or grilled chicken breast meals throughout the week, usually with a salad and a side (either a starch or veggies).

    And in the winter, I like to make chili, homemade soup & stuffed peppers a lot more.  I usually make something like that on a weekend or a day that I am working from home.  I don't eat red meat so our meals either have chicken, ground turkey or fish/seafood involved in some way.

  • 1. With the change in weather, we love this comforting, filling, easy meal of Pork Chops with Cinnamon Apples and Roasted Sweet potato.

    2. For a very simple meal that makes you feel like a kid again (because didn't you want pancakes for dinner as a kid too?!), we whip together some High Protein Oatmeal Pancakes.  We usually have all the ingredients already in the house, so it's nice when something falls through.  We found that serving it with some unsweetened applesauce as was recommended is SO GOOD.

    3. Taco Salads: Easy, yummy, and customizable!  We often have the makings in the house for tacos, except for the taco shells/tortillas - so minus those, we end up with salads. LOL

    4. From Proceed with Caution, we have come to fall back on this Southwestern Chili since we love that chicken is the meat in it, but also that it's a slow cooker recipe.  Of course, our slow cooker always overcooks the chicken! Sad

    5.  It's a tie between egg substitute, toast, and turkey sausages and whole wheat spaghetti (or other pasta) with jarred sauce.  It's not common we do this, but the eggs are a good way for us to get some protein, although definitely not a well rounded meal. LOL  The pasta & sauce... again, easy and we usually have it sitting in the cupboard (last time I made it, I sauteed some spinach, garlic, onions, and green pepper in a pan, then added the sauce and some meatballs made with ground chicken.  YUM.)

  • MH does most of the cooking but he does:

    1. BLT's (easy and then I can bring one for lunch the next day)

    2. Baked chicken and salad

    3. salads with grilled chicken

    4. steak tips for him and tilapia for me

    5. tacos

    and then we do other random dinners here and there

  • We do turkey tacos once a week until I start to get bored of it...we actually skipped the last two weeks and it was weird.

    Grilled salmon - even though it's getting cold, we'll prob still grill.  With a little teriyaki sauce or some rosemary, thyme, oregano, salt and pepper...yum!

    Baked salmon (or chicken) with pesto.

    Grilled shrimp fajitas (actually, chicken fajitas are a big one too).

    Chicken enchiladas are usually done once a month b/c I can get a few lunches out of the leftovers.

    I also discovered my crock pot recently and have made the Chicken Taco Soup and Chicken & Dumplings over the past two weeks - LOVE it.   

    Damn you Nest for screwing up my siggy!

    Spicy Orange chicken lets (in blog)

    Cornflake crumb chicken

  • some sort of grilled chicken with veggies

    a pasta dish like spaghetti, baked spaghetti or lasagna

    tacos or enchiladas

    a crockpot meal like chicken and dumplings or roast

    this time of year I've been making a soup at least once a week...I love chili, potato soup, cream of vegetable, vegetable beef
