who likes making dessert?

Over the next couple of weeks, we're having friends over for dinner several times. Although I'm comfortable enough making dinner, I'm SO uninspired when it comes to dessert. I'd like to do something in one dish (so not something like cookies) that's relatively easy to make.

By "easy" I mean: dirties few dishes, does not involve whipping or beating (my handbeaters have just died and I'm not the kind of dedicated cook who will do that business by hand), does not involve any specialized equipment (like an ice cream maker) and isn't terribly time consuming. It's the impossible dream, I know!

Anyone have any ideas?

    Recipe (sorry it's all in caps, I didn't write it out :P)

     

    LEMON BARS2 CUPS FLOUR                                                                        6 TBSP LEMON JUICE, DIVIDED1 CUP BUTTER (NO SUBSTITUTES)                                         4 TBSP FLOUR1 1/2 C POWDERED SUGAR, DIVIDED                                     1/2 TSP SALT4 EGGS, WELL BEATEN                                                          1 TBSP BUTTER2 CUPS WHITE SUGAR  

    MIX FLOUR, BUTTER, AND 1/2 CUP OF POWDERED SUGAR TOGETHER.  PRESS INTO 9X13 INCH PAN.  BAKE AT  350 DEGREES FOR 20 MINUTES.  MIX EGGS, 2 CUPS WHITE SUGAR, 4 OF THE 6 TBSP OF LEMON JUICE, 4 TBSP FLOUR, AND SALT TOGETHER;  POUR OVER BAKED CRUST.  BAKE FOR 25 MINUTES.  WHILE STILL WARM GLAZE WITH MIXTURE OF  1 CUP POWDERED SUGAR, THE REMAINING 2 TBSP OF LEMON JUICE AND I TBSP OF SOFTENED BUTTER.  ENJOY

  • I have a good one but may involve a *little* mixing. This is a recipe that I got from DH's aunt. I always make this when we have parties and it's always a hit.

    Banana Split Cake

    Combine 1 & 1/2 sticks melted butter and 3 cups graham cracker crumbs and press on large oblong pan to make crust

    In mixer, combine 2 sticks margarine or butter, 2 cups powdered sugar, 2 eggs, 1 tsp vanilla.  Beat at medium speed.
    Sprread on graham cracker crust.

    Slice 6 or 7 bananas lengthwise and dip in pineapple juice reserved from canned pineapples
    arrange on the above mixture, then spread  1 16 oz. can crushed pineapples (well drained),  16 oz. cool whip and top with sliced or whole strawberries or any fresh fruit and nuts.

    Chill for several hours or overnight.

  • this one requires whisking but no beating.  it is time sensitive b/c you can't overbake them or you won't get the goo in the middle but otherwise it is easy peasy

  • One of my favorite desserts is fried poundcake served with vanilla ice cream. Frozen poundcake bought from the store is pan fried in some butter until slightly browned and warmed. Served with store-bought vanilla ice cream and maybe a drizzle of chocolate syrup or sauce if you have it, it's the perfect lazy person's dessert. =P

    I have NEVER heard of this...but it sounds really yummy! I might have to try this one on one of the nights!

  • yogurt pie! this is my friend's specialty...it's ridiculously easy and super delish!  you can change up the flavors or use a reg crust if you like...i've had it a ton of ways.

  • i like eating dessert. hahahahah

     for easy dessert i make bread pudding.  i have an easy recipe where you just scramble everything and let it sit. then you put it in the oven.. let me think of the measurements though 'cause i just toss everything together.

     or i like making this pound cake trifle.

    you just sara lee pound cake and cut in cubes.  then you slice strawberries.  you also mix 1 T orange juice with 1 C cool whip and 1 C cream cheese.  and then layer teh pound cake, cool whip/cream cheese, strawberries and shaved chocolate.  BUT i get lazy, so i just use mini chocolate chips instead. heheheh =)

    i do that in the summer.

  • When I was still cooking/baking, I loved to make cakes (pineapple-upside down cake like the one from Roy's, chocolate souffles, red velvet cake) from scratch but they take effort and time. And you said cookies is too much? So then maybe what you're looking for is something like flan? This is the dessert to make when I'm lazy or have last-minute dinner guests. I just make it straight out of the JELL-O flan box and I used condensed milk (low-fat, if you prefer) instead of milk and everyone's asked me for the recipe, only to find out it's from a JELL-O mix =P

    This is genius. Seriously. This really, really appeals to my lazy side (which lately is, well, all of me). What do you normally put out? I can think of fudge sauce, caramel sauce, chopped nuts, cake sprinkles, chocolate chips, crushed Oreos and maybe chopped Snickers or Mars candy bars. Anything else?

  • two really easy desserts I love to do are a crumble, either a pear or apple.  SO easy, all you have to do is cut up the fruit and make a crumble mixture with spices, sugar and lots of butter

    OR

    my MIL has this amazing recipe for a banana phyllo, which sounds complicated, but totally is not.  you mash up some overripe bananas, mix in some brown sugar, spices and rum, and then put the whole mixture in some phyllo pastry (easily found in your supermarket freezer section).  put the whole thing in the oven and serve it warm with vanilla ice cream--YUM!  Although, maybe in your condition the rum is not such a good idea?  Wink

    You can use whatever you have one hand or what you are craving. No need to get everything but I love sprinkles and cherries with hot fudge personally. 

  • My lazy dessert:

    1 store-made angel food cake

    1 small box vanilla pudding

    1 cup milk

    1 tub Cool Whip

    1 carton Strawberries

    1/2 cup strawberry preserves

    Cut the angel food cake into thirds or in half (so you end up with rings that can stack on top of each other). In a bowl, mix the cool whip, milk and vanilla pudding. Take half of the strawberries, wash them, and thinly slice. Place in a different bowl and mix with the preserves. Start layering your cake with strawberry mix then cool whip mix. (ie: bottom of cake, strawberry, cool whip, next cake ring, strawberry, cool whp, top of ring)

    Use the rest of the cool whip mixture to frost the outside of the cake. Then take the remaining strawberries and use to decorate the outside of the cake. (sometimes i will cut the strawberries into fourths and decorate the top outer ring of the cake and base of the cake).

    It is yummy! And super super easy!

  • I have an idea...Costco! No prep, no clean up and delicious :)  DO you have places like that around?

    Personally, I get a little stressed out when I entertain because I try to do everything and try to make everything "perfect". Well, lo and behold,  I'm not Martha Stewart, I hate cleaning, hate being stressed about it, so I'm learning to pick my battles. Cooking from scratch just ain't one I'm willing to fight :)

  • My friend made this:

    Peel and core some pears (maybe 1/2 per person).  Dip cut side of pear in sugar (she used brown but I think you can use white).  In a pan, melt butter and "fry" the pears (sugar side down) until the sugar melts and caramelizes.  Turn the pears over to coat them in the caramel sauce.  Serve with vanilla ice cream.  It was so simple and really good!

    A lil' mixing (I don't have a mixer, so I've been able to do it all by hand), but no cooking! Super yummy!

  • This one of the easiest desserts I know (involves NO mixing) and has that wonderful combination of tart vs. sweet.  I don't have the recipe in front of me so I'm not positive of the cook time but you can just watch it.

     Dump Cake

    1 large can crushed pineapple (juice and all)

    1 large can cherry pie filling

    1 yellow cake mix

    butter pats to cover the top

    -Dump fruit into 9 X 13 pan, pour DRY cake mix over that and cover with butter pats (can use melted butter).

    -Bake at 375 for around 45 minutes

    -Serve warm with vanilla ice cream

    It's SO good.  The juice from the fruit and the butter make a nice crumbly sweet topping.  Just make sure the cake mix is mostly covered with the butter!
