Frosting
2 oz white chocolate (I eyeballed this?had to use white chocolate chips)
1 (8 oz) package cream cheese, softened
? cup unsalted butter, softened
1 teaspoon vanilla extract
? teaspoon orange extract
4 cups confectioners? sugar
2 tablespoons heavy cream
Batter
2 eggs, lightly beaten
1 1/8 cups white sugar
1/3 cup brown sugar
? cup vegetable oil
1 teaspoon vanilla extract
2 cups shredded carrots
? cup crushed pineapple
1 ? cups all-purpose flour
1 ? teaspoons baking soda
? teaspoon salt
1 ? teaspoon ground cinnamon
? teaspoon ground nutmeg
? teaspoon ground ginger
1 cut chopped walnuts (I didn?t use this,don?t like nuts)
Directions:
1. 1. Preheat oven to 350F. Lightly grease 12 muffin cups (or use cupcake liners).
2. 2. In a small saucepan, melt whitechocolate over low heat. Stiruntil smooth and allow to cool to room temperature.
3. 3. In a bowl, beat together thecream cheese and butter until smooth. Mix in white chocolate, 1 teaspoon vanilla, and orange extract. Gradually beat in the confectioners?sugar until the mixture is fluffy. Mix in heavy cream.
4. 4. Beat together the eggs, whitesugar and brown sugar in a bowl an d mix in the oil and vanilla. Fold in carrots and pineapple. In a separate bowl, mix the flour, bakingsoda, salt, cinnamon, nutmeg and ginger. Mix flour mixture into the carrot mixture until evenlymoist. Fold in ? cup walnuts. Transfer to the prepared muffin cups.
5. 5. Bake 25 minutes in preheatedoven, or until toothpick inserted in the center comes out clean. Cool completely before topping with theicing and sprinkling with remaining walnuts.
Val?s changes ? I made the icing first and refrigerated it so it was cold when I used it. I?d probably do this again, or make it last (since the directions have you making it first and then just kinda drop off). I also did not have crushed pineapple,but took pineapple chunks and threw them in the chopper for a few seconds ?worked fine. I shredded the carrots myself using a KitchenAid attachment?.loved this. They were super fresh! I don?t like nuts in my cakes/brownies, so I skipped that. Instead, after they were frosted, I dusted with cinnamon. Also, I baked for 20 minutes, which was perfect, but I?m also at high altitude.
Overall, these were loved by Mike, my mom, MIL and BIL (who refuses to eat anything dessert-like). They were a HUGE hit and will be added to the usual rotation now that I?ll have time to start baking again!

Those look and sound so yummy!!! Im making mine tomorrow since i was down and out half the day today. Great job Val and i love pineapple so im sure they tasted uber yummy!

Val, did you use a tip and bag or do you have a decorating gun?
I have a gun, but the top ring is cracked, so it's on my Christmas list. I just can't decide if I should stick with the gun... or ask for bags and tips.
Thanks guys! I just pawned them off on my CWs and they seem to like them too.
I used a cheap bag and plastic tip this time. I lost all but one of my nice Wilton tips, so I need to replace them....you can see where I really screwed up w/this thing. I've never been very good at decorating (I've never really practiced either) but I can normally do a little better than this.
