Diet Coke Cake

Has anyone made a cake substituting a can of diet pop for the oil and eggs?  I am intrigued by this and am wondering if it really tastes the same as when it's made the full fat way?

  • Yes.  It's fantastic, although I'd recommend only using 10 oz of diet soda + two egg whites.  That, in my experience, turned out a little more normal "cake", whereas when I made it with just straight "one can of diet coke", the cake was fairly sticky.  Good, but sticky.

    I did this for our Packer party two weeks ago.  Yellow cake mix (reduced sugar from Pillsbury) + 10 oz Sierra Mist Free + two egg whites.  I beat neufchatel cheese + a can of reduced sugar vanilla frosting (again, I think Pillsbury) + zest & juice of one orange.  YUM.  No one would've thought I'd "cheated" and used a box, and it was easy and fast.

    ETA: I added that recipe here for nutritional info when I made it two weeks ago as mini-cupcakes.  DEFINITELY will be making it again - possibly even this week for Halloween.

  • Yep, I've done it several times.  I like diet Sierra Mist (or sprite) with Pineapple cake mix.  I've heard diet Dr. Pepper and chocolate is good too.

    You don't even need frosting with it!

  • We did Coke Zero once with a chocolate cake mix.  And also a Coke Zero Vanila once, but you couldn't even taste the difference.

    If I make it again this week, I think I'm going to try and find a diet cream soda, although the Sierra Mist Free was really good.

    Paula - when you say the cake was sticky when using just the cake mix and can of pop, do you mean it was really moist? 

  • No, the top was extremely sticky. The container I'd put them in had cupcake "rub-off" I guess you can call it from anywhere the edges of the cupcakes had even touched the edges of the pan.  They weren't BAD, by any means, but eating them meant you got them ALL OVER your fingers. LOL

    I'd made them for MH's softball team, and even one or two of the guys were a little Confused at having the chocolate cupcake all over their hands.

  • Good to know that adding 2 egg whites helps reduce the stickiness. I've always liked the diet coke cake (or diet 7up, diet cream soda, etc) but wondered how you could reduce the stickiness!
