... but MH LOVES it. It was a staple in his house growing up. Mine, not as much, because I hated it. LOL (My mom didn't often make foods we outright HATED.)
So I have been trying to find a good compromise.
Enter Chipotle Meatloaf (made with turkey):

I really wish I'd taken a picture of when I made it ... they came out AWESOME. (I used my mini-scone pan and they came out in perfectly sized little triangles.)
I ended up using a package of ground turkey (95% lean) and realized too late that was only 1 1/4 pounds of meat, so grabbed a half pound of 93% lean ground beef and threw that in as well. (Truthfully, two full pounds was too much - I would've had leftovers, but I was able to squeeze the 1 3/4 pound concoction into 16 triangles JUST barely.) I also added in a half cup of grated zucchini and used about 1 1/2 chipotle chiles.
Best part... at 16 servings, they're still ~90 calories each. MH just sent me a text - he'd packed me one with some roasted sweet potato (YUM!!) and himself some sandwiches made from them. He said in sandwich form, they're outstanding with just a bit of zip as well.

I had meatloaf for the first time ever a few months ago. MIL made a turkey florentine meatloaf that was really very good. I also made it once at home and we both liked it.
This recipe you posted sounds pretty decent. I think it's a good winter meal.
