Any of you girls have tried and true recipes for chili or stew made in the crockpot that you can share? or any newly discovered crockpot recipes that you like? I already have that crockpot recipe word document that has been passed around the Nest over the past few years so I'm looking for new stuff.
Re: Crockpot chili or stew
Slow Cooker Chicken Taco Stew
Ingredients:
(1) onion, chopped
(1) 16oz can black beans
(1) 16oz can kidney beans
(1) 16oz can corn (drained)
(1) 8oz can tomato sauce
(2) 14.5oz cans diced tomato w/chilies
(1) packet taco seasoning
(2) boneless skinless chicken breasts
Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6--8 hours or on high for 3-4 hours. 30 minutes before serving, remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese, sour cream, and/or tortilla chips.
here is my chili recipe, you can make it on the stove top or in the crock pot. let it simmer for as long as you like. the longer it simmers, the greater the flavor.
1 lb. lean ground beef or turkey
1/2 cup chopped onions (about 1 small)
1/2 cup chopped green peppers
1 can (15oz) kidney beans, drained, rinsed
1 can (14.5oz) diced tomatoes w/chilies or regular diced tomatoes
1 can (12oz) tomato sauce
1 Tbsp. chili powder
1/4 tsp. crushed red pepper
shredded cheese
brown meat in large skillet on medium heat, drain. add onions and green peppers, cook 5-6 minutes or until vegetables are crisp-tender, stirring occasionally.
add all remaining ingredients except cheese, mix well. reduce heat to low, cover. simmer at least 30 minutes, stirring occasionally.
top each serving with shredded cheese of your choice. i like mexican blend or sharp cheddar.
