BU: Pork Carnitas and Bailey's Cupcakes

This pork is so easy and low maintenance.  It turned out fantastic.  The 7.5 pound roast I made yesterday was enough to feed 7 adults and we still have about half leftover. 

The Irish Car Bomb cupcakes were gone almost immediately after I told people what was in them.

  • I am going to have to try to make those Carnitas, I've never had them made in a crock-pot before, they seem super easy. The cinnamon in it scares me a little, can you taste it?  Thanks for the recipe, I am going to give it a try this weekend.

  • The cinnamon doesnt make them taste like cinnamon, just gives it sort of a mild sweetness and depth of flavor.  If you've had carnitas before and want the pork to crisp up a little bit more like the traditional fried carnitas, put the cooked pork on a cookie sheet in the oven under the broiler for a few minutes before serving.
