Who is cooking Thanksgiving dinner??

Hi All!!

My parents will be out of town this thanksgiving, and my In Laws live far away in Montana, so my hubby and I are cooking this year!!

 Anyone else cooking for Thanksgiving?

Anyone ever put their turkey in a BRINE?

I am a food network junkie, and i am very excited to try brining the turkey first!! Anyone recommend a good recipe for their brine?? THANKS!

Re: Who is cooking Thanksgiving dinner??

  • MIL is cooking this year. We hosted last year so I am off cooking this year until Christmas.  But we still bring sweet potato casserole, corn, and cranberries since my MIL's Thanksgiving dinner doesn't have the traditional food you usually think of. This way it's a little more like the traditional Thanksgiving dinner.

I have never cooked my turkey in a brine.  I am a Reynolds oven bag devotee.  They have never led me astray! But I will be interested to hear how your turkey turns out.

  • Hi there, I'm kind of a lurker on these boards, but I love to talk about cooking! I am doing a brine this year- I had been doing a lot of research about homemade brine recipes, but just broke down and purchase Williams-Sonoma Apple & Spices brine last week. I've heard fantastic reviews on this brine (and brining itself), so I'm very anxious to see the results.

Some good brine recipes online have been Alton Brown's Good Eats Turkey, and I've also been hearing some buzz about Anne Burrell's Cider-Brined turkey as well. GL!

  • I'm probably just making a desert b/c we're not hosting.  I've done a turkey once or twice.  My grandma always used the oven bags.  I've tried it too, it works but the skin might stick to the bag.  Moist turkey though!  My co-worker used a brine recipe she found at WIlliams Sonoma (not the jar, an actual recipe).  She said she'll never do an un-brined turkey again!

  • We are cooking it all as well. Check your turkey. A lot of the turkey that is sold at major grocery stores already has been brined. You dont want to do this twice. We are doing ham, turkey, and a boat load of sides. Good luck cooking. Its fun and not too stressful if you time it all out!
  • We're not hosting but our Thanksgiving is potluck style because my family is huge.  The host makes the birds (yes, TWO 25lb birds!) and then everyone else bringssomething to share.  I'm not sure what I'm doing this year yet...need inspiration...

I just want to reiterate this. I have brined a turkey and for me it is a must. My mom and I are cooking everything this year. Turkey w/ gravy, Pork Roast w/ gravy, Green Beans, Butternut Squash gratin, mashed potatoes, cranberry sauce, sweet potato.

  • We cook thanksgiving every year. We ALWAYS brine the turkey, and the last few years we've used the Alton Brown recipe that a pp posted. It always comes out very well!

The turkeys we get are not pre-brined.

  • I am (in conjunction with my mom). We only do fried turkey so I know nothing about brine. Sorry. We are having Fried Turkey, broccoli, cheese and rice casserole, mac and cheese, cornbread dressing, cornbread, rolls, sweet potato casserole, and collard greens.

     Working on dessert now.
