Share your Turkey Day side dishes
We're going to my aunt and uncle's for Thanksgiving. I was going to make an apple pie, but turns out somebody else already is. So I need ideas for something yummy and easy to make that I can bring instead. Thanks, ladies!

Two simple, healthier alternatives:
Roasted acorn squash--Cut squash into eigths, drizzle with olive oil and spring with cinnamon. (Optional: sprinkle with brown sugar too.) Roast at 350 for about 30 minutes. It's done when you can pierce the skin with a fork.
Roasted brussels sprouts--Cut sprouts into quarters; toss in olive oil and black pepper. Roast at 350 for 30-40 minutes. Done when slightly golden-brown. Gives the spouts a nice nutty flavor and none of the bitterness that most people associate with this poor, maligned vegetable.

I second Mrs. Bill's suggestions! Those are super great, easy to make side dishes.
You could also do an appetizer kind of dish depending on your family's thanksgiving style. Cheese & fruit tray, bean dip & veggies, ceasar salad on crostinis (bite sized), onion tart (basically pastry dough, caramelized onions, thyme & sliced black olives & parmesan cheese - baked, I have recipe if you need).

I am doing my mom's sweet potatoes this year - super easy and delish:
Boil sweet potatoes until soft but not too mushy (I think about 20 minutes but just keep poking with a fork to test). Peel the skin off, and cut long-ways into thirds. Basically - you want long, thin strips of the potato; if it's super think you might even be able to cut four times. Lay the strips out on a baking sheet (buttered so they don't stick). Then go crazy - a dollop of butter on each one, soak them in maple syrup, sprinkle brown suger over them (more than just a sprinkle, though!) and top each one with as many marshmallows as you like. Bake them for about 20 minutes at 350 (again, just keep checking to see that they aren't burning and the marshmallows are melted) and voila - the most unhealthy way you could possibly prepare a vegetable! But it's delish!

For appetizers we are doing:
-A cheese and fruit plate
-Crudit?s & homemade hummus
-Homemade guacamole & chips (weird I know, but it is a family favorite and always requested)
-Spanakopita from Poseidon Bakery- the best!
-Olives and other Mediterranean specialties
To start dinner we?ll have individual bowls of butternut squash soup with garlic croutons.
Besides the turkey and fake turkey (for the vegetarians) here are our side dishes this year:
-My famous mashed potatoes & gravy (I may have to break my vegetarian diet for this gravy- sooo good!)
-Vegetarian and non vegetarian stuffing
-Creamed cauliflower
-Roasted carrots (recipe I found on Pioneer Woman?s site)
-Sweet potatoes with crispy crumble top (think apple crisp)
-Cranberry loaf & cranberry sauce
-Turnips (eww- my aunt is making these b/c I hate them)
-Biscuits, rolls and rosemary bread
We go a little overboard in our house (I didn?t even mention the 5+pies). But its fun! Let me know if you want any recipes.
Jen, where do you live? Because I'm ditching my aunt and uncle and coming to your Thanksgiving instead
