hey all! i know there are several regular circulating posts about tried and true white chicken chili recipes, and i just made this today and it turned out great. thought i'd post the recipe for those that want to try it out!
Place three large chicken breasts in bottom of crock pot. On top of chicken, dump two 15 oz cans of northern beans (drained and rinsed) and one can of yellow & white corn (drained)
In a separate bowl, mix together 14 oz of chicken stock, one can of cream of chicken soup (i used low sodium), one 4 oz can of chopped green chilis, one packet of taco seasoning, and several shakes each of chili seasoning and cayenne pepper. After everything is mixed, dump into crockpot.
Cook all on low 8 hours ( I cooked mine on low 6 hours and on high 1 hour cause I had to leave for work, and it turned out fine)
After cooked, take out each piece of chicken and shred with forks. Dump back into crockpot. Then stir in a mixture of 3 T corn starch and 3 T water (to thicken- can use less or more depending on preferred texture)
This yields four LARGE portions. Mine came out pretty mild but I really like it. YOu can always add more chili powder or cayenne if you like spicier. My DH added cheese, sour cream and oyster crackers to his. Delish!
