I need food help...

My brother and SIL are hosting our family Christmas this year.  They set the main menu, and then we all bring sides/desserts.  SIL is a vegetarian, so their menu is never a traditional holiday menu. This is what they are making:

 Main Course
Salmon, Cuban style.
Roasted potatoes with rosemary
Pasta w/ shrimp
Vegetable dish if needed.

Appetizers
Spinach balls
Assortment of cheese and crackers
Crab dip 

Beverages
Herbal iced tea
Wine, Mixed Drinks.
Juice 

We need the following:
Dessert
Vegetable dish
Beverage of your choice

 Myself and 2 of my BILs don't do fish, and DH is not a fan of Salmon.  Help me think of something semi-traditional to take along that will also go with the menu.  I think I may take deviled eggs just because EVERYONE in my family loves them.

  • I'd do a ham or herb roasted turkey.

  • What about a casserole? You could get creative with a casserole and put anything in it you want.

    As for a traditional veggie dish I'd do broiled asparagus with garlic and olive oil and kosher salt, or welsh rarebit if you want something a bit richer. 

    Also - if you don't want to offend her vegetarian sense but you want a different protein option you could bring black beans and rice, you know, to go with the Cuban salmon? 

    For dessert you could do really anything. Cheesecake, white wine cake, cookies, brownies, whatever sounds tasty to you.

    You could do a lasagna (with our with out meat). They transport easy and can be made ahead.

    The vegetarian eats fish.  Just not real meat.

  • Then she is a pescatarian, not vegetarian. I would ask her if bringing a small ham or turkey breast would be ok. Fish can be a tricky thing, DH won't eat it unless it is sushi, my dad isn't a fan at all, and my sister doesn't like salmon. If it was me, i wouldn't be offended at the offering of a main dish for everyone else and I was vegetarian/pescatarian for 5 years.

  • Is shrimp OK with you, BILs and DH?  If so, then I wouldn't worry about another entree. 

    Deviled eggs are more of an app than a side dish, and she's asking for a veggie side.  I'd make a winter salad.
