Cooking for Christmas

I have never cooked a traditional Christmas Dinner (traditional for me = Turkey).

It will be me, DH, BIL, and SIL, and my dad.

I live in an apartment, with a smaller kitchen.  This is what I plan on cooking -

Turkey, Mashed Potatoes, Candied Yams, Mac & Cheese, Stuffing, Gravy, and probably a veggie (string beans), and rolls.

Of these items, what will be okay to cook the day prior?  B/c of the size of my kitchen, and the quantity of pots and pans, I cannot do it all on one day. 

I was thinking I could cook the Mac & Cheeze, and reheat in the oven, like an hour prior to serving (stirring occasionaly). 

What else can I cook the day prior - mashed potatoes??

Anyone have any good recipies for cooking a turkey?  I've never done this.

  • If you have a crockpot, green bean casserole can be made in there. Not the day before, but at least it would be off your stovetop.
    We have so much time, and so little to do! Strike that, reverse it.

  • As for the turkey, I've never made it myself, but my mom swears by the bag. You can buy it at most grocery stores, and just follow the directions on the box.  It keeps it really moist and you don't have to continually tend to it.

  • You could make the mac and cheese the day before, at least up to the boiled noodles and mixing with the cheese, then just refridgerate it. Skip the oven until the day of. Not sure how great mashed potatoes would reheat. You might be able to do that and add a little extra butter when you reheat.

  • Also, if you or someone you can borrow from has a roaster, you could cook your turkey in that as well. My Grandma does that with hers quite often.

  • I just bought a Rosting Pan @ Macy's - the kind that goes in the oven, not external.   Thank you though!
  • My mom actually made her stuffing in a crock pot at Thanksgiving and it turned out really well.  Otherwise you can stuff the bird but it usually takes longer to cook.

  • Check out my blog - I've just posted most of my Thanksgiving dinner recipes which was very similar.  I'll be posting the turkey recipe in the next couple days. 

    It was a really simple recipe, brine the turkey the night before and then cover with herbed butter and stuff the cavity with aromatics. 

    At thanksgiving, I put the bottom rack on the lowest available level and the second rack just above the turkey, that way I could still fit 2 9x13 casserole dishes on the top shelf of the oven.  I cooked the sweet potatos and butternut squash (sub your green bean casserole) first because they took the longest.  Pulled them out of the oven about 30 minutes before the turkey was done and covered with foil.  Then I put in the stuffing mixtures (I cooked the onions, celery etc the day before and then just mixed it with the bread cubes and stock day of) in the oven to bake.  Once you pull the turkey out put in your rolls, macaroni and cheese (let it sit on the counter for about an hour before you bake it so its not so cold) and get them hot while your turkey stands.  While you carve the turkey, reheat the sweet potatos and green bean casserole. 

    You can peel your potatos and cover with water the day before and you can cook them the day before but they aren't as good.  I cooked mine and mashed them and put them in a crockpot about an hour before the turkey was done to keep them hot but get them out of my way.

  • When I made mac 'n cheese for Thanksgiving I just assembled everything the night before and waited to bake it on the day of.
