Peppermint Cooking Challenge - My recipe & PIP

Peppermint Bark (recipe from Good Things Catered blog)

Ingredients:
17 oz. good quality dark chocolate, finely chopped
17 oz. good quality white baking chocolate, finely chopped
1 tsp peppermint extract (I didn't use this)
about 50 red and white peppermint candies, coarsely chopped (I used 10 candy canes and crushed them in a ziploc bag)

Directions:
-Line a 13x9 in pan with tinfoil and spray very lightly with nonstick spray.
-In a double boiler, melt dark chocolate over low heat.
-When chocolate is smooth, remove from heat and add peppermint extract and combine thoroughly.
-Pour mixture into prepared baking dish.
-Spread evenly and chill in refrigerator until soft set, about 30 minutes.
-In clean double boiler, melt white chocolate over low heat. (If there is any powder left from chopping peppermint candies, I add to white chocolate here)
-Remove baking dish from fridge.
-When chocolate is smooth, remove from heat and pour over dark chocolate mixture and spread evenly.
-Carefully sprinkle the coarse peppermint candies on top of the white chocolate to cover most all surface.
-Place baking dish back into fridge or freezer and refrigerate until fully set (3 ? 24 hours). (I let it set for 5 hours)
-Remover baking pan from fridge.
-Lift candy in foil from pan and transfer to a cutting board.
-Peel off foil and break/cut candy into 2 inch pieces.

This was so easy to make and is very yummy.  I will be making this again this year.  We'll see what DH thinks when he gets home from work.
