Here are the requested recipes. The only one I can vouch for is the Special K candy. The others are all new to us!
Fruit Salsa:
2 tbsp granulated sugar
3 tbsp brown sugar
3 tbsp jam, any flavor
2 Fuji apples, diced
1/2 lb Rainier or dark sweet cherries, pitted and diced
8-12 oz frozen raspberries, thawed
12-16 oz frozen strawberries, thawed and sliced
2 kiwis, peeled and diced
First combine sugars, then add jam and mix. Add fruit and stir to blend. Cover and chill for 15 minutes.
Apple Cranberry Wonton Cups:
1 pkg small wonton wrappers, refrigerated
1/4 cup butter or margarine, melted
Confectioners sugar
4 med cameo or Fuji apples
1 tbsp lemon juice
3/4 cup sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/2 c dried cranberries
1 tbsp water
2 tbsp flour
Preheat oven to 350. Lightly coat a mini muffin pan with cooking spray. Brush one side of the wonton wrappers with melted butter and fit into muffin cups, butter side up. Bake for 10 minutes.Remove and cool on a rack. Once cooled, place back in pan.
Dice apples into 1/2 inch cubes. Place in a sturdy pan and mix in lemon juice, sugar, cinnamon and nutmeg. Bring slowly to a boil, stirring occasionally. Add cranberries and boil for 5 minutes. Make a thin paste by stirring in water into the flour. Add this mixture to the apples and cranberries; cook, stirring constantly until th emixture has thickened.
Pour the boiling mixture evenly into the wonton cups. Return to the oven for 15 minutes. Remove, let cool slightly, and serve.
Pineapple-ham rollups:
6 burrito-sized tortillas, warmed
12 tbsp pineapple flavored cream cheese
2 cups diced fresh pineapple
6 tbsp dry-roasted sunflower kernels
12 slices deli ham
Spread 2 tbsp cream cheese on each tortilla. Sprinkle pineapple and sunflower kernels evenly among tortillas. Place 2 ham slices on each tortilla. Begin rolling from the bottom up and secure with toothpicks.
Special K Candy:
Bring 1 cup sugar and 1 cup light Karo syrup to a boil. Fold in 1/2 small jar crunchy peanut butter and 5 cups Special K cereal. Press into a large buttered cookie sheet (with a lip). Top with 12 oz butterscotch chips and 6 oz chocolate chips that were melted in a double boiler. Refrigerate, then cut.
