What goes with Italian food?

My family is doing Italian for Christmas Eve. It's kinda hard to figure out what to make since there are 3 sisters + SIL + mom, everything is covered! We already have seafood lasagna, dip with cheese & crackers, salad, sausage penne, stuffed shells, and lots of dessert treats so far. What kind of vegetable side dishes do you like w/italian?

  • I'm so glad you asked this and eager to hear the responses.  I'm doing Italian next weekend for our holiday dinner.  I've been trying to figure out what to make.
  • Hmmm... you have a salad-which would be what I recommend...

    Maybe green beans? Tomatoes and mozzarella? Asparagus, broccoli?

    I agree with tomato/mozzarella salad

    Or how about a twist on that using tomato, artichoke hearts, and olive oil/balsamic drizzle?  I can't remember exactly what's in a "salad" like this, but it's very yummy.  It might have a bit of Italian-type seasonings on in (basil).

    ETA:  I've also made the tomato/artichoke salad with onions or black olives.  And, forgot to mention, it tastes best when you let it sit to marinate for a bit.

  • This isn't really a veggie, but DH's mom always makes spinich & cheese stuffed bread. It's delicious and goes well with all of the meals.

     

    Dh's family is Italian and I've never had a veggie dish there. It's awlays salad, spinch/artichoke dip, shrimp rings, breads, and pasta dishes.

    One time for a party I did chunks of mozzarella and grape tomatoes on toothpicks with a little drizzle of herbed olive oil.  You could also do olives.  they were pretty and easy to eat.

    You could also do bruschetta on thin slices of italian bread

  • Definitely the tomato/mozzarella, and I have a recipe somewhere for a baked spinach with gruyere (sp?) cheese dish - sounds fabulous and unhealthy, and seems like it would go with Italian.

  • My family is Italian . . . fresh veggies go best with anything italian.  We don't put a ton of cheese or oil in with everything usually, I think thats a regional thing.  Artichokes, tomato salad, brocolli, those are all faves.
