DUMB cooking question.. dont laugh

my husband has requested cheeseburgers for dinner tonight.. it is a rare occasion that i actually cook dinner since most nights one or both of us is at work.. and i work at a restaurant.. so i really dont ever have to cook.

anyway.. i have ground beef (and rolls and cheese).. but i have NO clue what to do to make the beef into a burger. how do you make it stick together? and do i add seasoning??

  • You can add nothing to the burger or you can add a little seasoning, an egg and a little bread crumbs.  Roll into a ball and then flatten out.
  • Hi! DH loves to make burgers from scratch. Just grab a ball of meat and flatten it between your hands into the shape of a burger. Mine likes to put onion powder, or chili flakes in it. Depending on his taste you may want to add salt and pepper or something even more spicy. Sounds like a yummy dinner!

    And I always put plastic baggies on my hands when I make them. They also shrink and fatten a ton when you cook them...so make sure they are pretty big but not too thick.

  • One tip I read about shrinking burgers is to place a thumb impression in the center of the burger prior to cooking so that it doesn't shrink.

    Also, are you cooking on a grill or inside? If inside make sure that the pan/ griddle is hot and that the room is properly vented. This will splatter and smoke. 

    Either way, don't flip the burgers too much as this will make them dry. 

    I add McCormick Grill Seasonings, Worcester sauce, maybe some red pepper flakes. I also use the egg and breadcrumbs to help bind the meat together.

    LOL, that you work in a restaurant and don't know this!  Go ask this to one of your chefs next time you go into work!  (FYI-I am a 15 year restaurant vet) 

    Don't put egg in, or bread crumbs, those go in meatballs!  You don't need anything to hold it together, just sweeze and press it together with your hands.  Since you haven't made them before, you may want to spray some cooking spray right on the burger before cooking, it will help it from falling apart if you try to slip it too early.  Also, in order to stick together and be a burger, it needs to be fattier ground beef, 80/20 or 85/15.   Anything with less fat isn't going to hold together.  You don't need spices, but you can add them if you wish.  What ever sounds good, salt, pepper, garlic powder, onion powder, chili powder, whistishires(sp) sauce.

    The egg and the bread crumbs act as binders so if you wanted a leaner burger with less fat this would help. These items aren't only for meatballs they are great additions to meatloaf and BURGERS!

  • Sorry, that didn't read exactly as I meant it.  I guess the snotty waitress, degrading cook, and demeaning manager in me just kicked in when I heard the word restaurant.  It's like I flashed back to a previous life.  Just check my link, it should be give you the low down!
  • haha.. its okay. :) As it turns out.. I am an idiot.. My MIL actually brought over a bunch of grocerys the other day.. Dh told me she had brought ground beef.. but it turns out.. she actually brought premade burgers.. LOL.. so this whole post was pointless.

  • We add salt, pepper, garlic powder, Worcestershire sauce and A1 sauce. And just as an fyi, I know you're supposed to use fattier meat, but I use 90/10 and I don't add any egg or breadcrumbs and the burgers stay together just fine.
