I cheated this weekend. I made delicious brownie cupcakes (pictures to come with recipe) for the party we went to, but I needed a backup in case someone was allergic to chocolate, didn't like chocolate (I know,.. crazy, right?!
), or didn't like peppermint.
But no way was I making another from scratch recipe. LOL So I cheated and tried something I'd heard about but never attempted.
1 box cake mix + 1 can pumpkin
I used Spice cake mix, 1 can pumpkin (15 oz), and added one egg white (I only had one egg left and had read various reports of just the pumpkin and cake mix versus pumpkin, 2 egg whites, and the cake mix, so I was on the fence and threw in the one egg white. LOL)
YUM. The batter was THICK, no doubt. I probably overfilled the liners a bit, but I like my cupcakes BIG and I was shocked how they rose. I threw together some Cream Cheese frosting and the combination was THE BEST. If eaten the same day, the cupcakes were INCREDIBLY light and the perfect combination - I told everyone they were Pumpkin Spice cupcakes because that's exactly what they tasted like. Super moist, but somehow kind of crumbly still.
It only made 14 cupcakes, but it was SO FREAKING EASY.
I wanted to pass this on in case anyone else is in a pinch and needs something fast but that will impress. My next mission is pumpkin + the Devil's food cake mix.
