I think I came up with at least a few ideas for the food topics I asked what you'd do earlier in the week. Please let me know your thoughts/suggestions:
Christmas Eve: Fondue for two. :-) A nice salad and then various meats (chicken, steak, shrimp likely), potatoes, broccoli, and mushrooms in bouillon with citrus juices, garlic, and pepper.
Christmas Day: Still undecided. I had thought of maybe doing bacon wrapped water chestnuts, but I'd like to have a side dish. There'll only be 7 of us, so I have to be careful not to overdo this.
Family Christmas (Sunday, 12/27): Probably a crockpot lasagna (debating between noodleless lasagna (squash & eggplant in place of the noodles, which has piqued my curiosity for months now), Buffalo Chicken lasagna, or just a standard one (blah to me, but safest bet). I also would like to do something sweet (maybe Oreo truffles since they're easy?) but MH said I already have enough going on and shouldn't push myself. LOL
New Year's Eve: I had thought and still think I'm going to do mini mint-chocolate brownie cupcakes assuming I can find the mini Yorks (like the little round ball bites they used to have.) I also need to find time to test out a champagne cake recipe for mini champagne cupcakes.
Our friends who are expecting: I'm thinking Shepherd's pie and stuffed shells. I'd like to make them a soup as well (which I can then freeze flat to save on storage), but unsure if I can find a recipe for one that'll freeze well and reheat well. Greg suggested we offer a night for us to plan a meal, bring all the ingredients, and then cook at their house so we can also spend time with them (no clue what we'd make! LOL)

It sounds like on Christmas eve you are recreating the melting pot, which I love so that sounds amazing!
I have never had bacon wrapped water chestnuts, but you had me at bacon.
Are there a lot of picky eaters coming to the family christmas? If so it may be safest to say with the regular lasagna, although they all sound really good.
You can't go wrong with cupcakes! I think the champagne ones would be really fun and festive!
I am having the same dilema coming up with things to make, I think on Christmas I am going to make a vegetable, which is easy. But I have to come up with two appetizers to make, one for Christmas eve and one for New Years eve and I am cooking and baking challenged as you know

Yes and no. I've made some things I didn't think my family would eat only to find they gobbled them up and raved about them! So I think I'm fairly safe if I make Buffalo Chicken lasagna, which would please me because who doesn't like Buffalo Chicken!, while it being something I'll still be happy with because it's not totally plain Jane food, you know?
Hmmmm... who are you cooking for? Where is it (like how far/long do you have to travel for each)? I think you aren't as cooking challenged as you think you are! You've made sliders and things like that before and I've never done that!
I was going to say I think the buffalo chicken lasagna sounds really good, let me know how that turns out!
Christmas eve it will be about 10-12 people probably and New years eve probably 8-10. Both are at my parents house which is 10-15 mins away. People likee the sliders, they were so much work though lol.
I will keep my eyes peeled and take a peek at what I've starred on my google reader.
I agree - the sliders are a LOT of work... hence the reason I wouldn't attempt them! LOL
