If you need dessert ideas, I've got an easy one for you. I made cran-apple tartlets this weekend. They were supposed to be cran-apple wontons, but I couldn't find wontons anywhere. I just used individual pie shells and put in an apple and cranberry filling I made and baked for about 20 minutes. Everyone said they were good, and they were super easy to make.
Apple Cranberry tartlets:
12 mini pie shells, refrigerated
4 med cameo or Fuji apples
1 tbsp lemon juice
3/4 cup sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/2 c dried cranberries
1 tbsp water
2 tbsp flour
Preheat oven to 350. Let pie shells thaw
Dice apples into 1/2 inch cubes. Place in a sturdy pan and mix in lemon juice, sugar, cinnamon and nutmeg. Bring slowly to a boil, stirring occasionally. Add cranberries and boil for 5 minutes. Make a thin paste by stirring in water into the flour. Add this mixture to the apples and cranberries; cook, stirring constantly until th emixture has thickened.
Pour the boiling mixture evenly into the pie shells. Bake for 20 minutes or until shells look golden brown. Remove, let cool slightly, and serve
