My mom has put me in charge of making the sweet potatoes for Christmas dinner. We have a problem every year - my sis, BIL, MH and I all hate nuts in food, my mom doesn't know how to cook without them. So I told her to let me do the sweet potatoes this time because we seriously threw out an entire casserole because no one would eat it (because of the nuts).
So I'm trying to find a recipe for sweet potatoes that uses pineapples or some other fruit and NO NUTS.
Anyone have a good option? I found one that seems too simple to be good. You mix (baked) sweet potatoes cut into chunks with a can of crushed pineapples and brown sugar and bake.

I am thinking of trying this recipe minus the nuts because I like nuts, but not in my sweet potatos.

Sick of the same old yams? Sweet potatoes and apples add a colorful, crunchy twist to your holiday table!
Ingredients:
Remove potatoes from oven. Once cooled, scoop out the insides with a spoon. Place 1/2 of sweet potato meat into the bowl of an electric mixer. Add 1/2 of juice-and-cream mixture, blend until combined but not smooth, and pour into a large baking dish. Repeat with remaining potatoes and juice-and-cream mixture, and add to baking dish.
Melt butter in a large skillet over medium-high heat. Add apple wedges and brown sugar; cook about 10 minutes, turning apples occasionally, until lightly browned on both sides. Place on top of sweet potatoes and bake 30 minutes, until heated through. (Note: If refrigerating before baking, cook 45 minutes, or until heated through.)

Me either, Kristin... I made a "sweet potato" casserole for Thanksgiving but winged it and ended up just basically making mashed sweet potatoes with a little brown sugar and pecans on top. LOL
