Hey!  You're our J9 resident cake expert, right?

 

What does it mean when the recipe tells you to make a 4-in "collar" around a cake with wax paper?  Do you just wrap it around the cake?  It's a multi layer cake so I'm thinking that's what keeps it from staying put and keeping shape.


How do I keep the collar "fastened"?

  • Are you topping the cake with something? it sounds to me like some sort of mechanism to keep the cake in shape or upright while it either sets up or you top it with something. Either way, you can wrap it in wax paper and secure it with toothpicks, I'd say.

  • Yes.  It's a multi layer cake.  Bottom layer is chocolate cake.  Next layer is cheese cake.  Next layer is chocolate mousse.  Next layer is ganache.

  • Sorry - I've been out of pocket for a few days since we were in Iowa... how did the cake turn out?
  • Hey Hawki!  Hope your trip was fun.

     

    The cake turned out AMAZING.  I got so many compliments on it.  I figured out the collar thing and it ended up being fine.  I still haven't gotten the aesthetics of a cake down pat, but it tasted SO good.

  • Great - it sounded really good.  I've never tried to do anything with the collar, I may have to find a recipe (I only got 6 new cookbooks for xmas, I'm sure I can find one).
