Leftover Turkey

So, we have A LOT of left over turkey from Christmas and I want to get some ideas on what I should do with it aside from soup and sandwiches.

What do you make with your left over turkey? My MIL brought a 20lb turkey for 8 of us! Nuts.

  • What about some casseroles, rice or pasta based would probably be pretty tasty.

    I made turkey chili yesterday. Same way you make regular chili but add turkey in the last hour instead of ground beef in the beginning.

  • I saute the turkey with tomatoes, onions, peppers, cumin, garlic and some salsa. I then wrap it in tortillas and put it into a baking dish. I cover it with some more salsa and cheese and bake it at 350 for about 20 minutes.
  • Turkey pot pie or creamy chicken enchiladas are two of my faves.  Super yummy!  You could also do turkey a la king.

     

  • Great ideas! I'm leaning towards turkey pot pie - perfect comfort food! Now...I just need to find a recipe and make it tomorrow.
