I've never been invited to one.
BIL/SIL are having a pot luck dinner. Truthfully, I don't want to go, but I'm gonna kick my heels up and put on a happy face.
What should I bring?

Did they give you a category? Well-organized potlucks either have signups or assignments, or else you end up with a ton of dessert and no dinner.
If it's wide open, I'd recommend some sort of baked potato dish. My SIL makes a scrumptious potato dish that she bakes with cheese, bacon and jalapenos.

These people are doctors, and alas vey smart. However, when it comes to things like this - they are horrible, its very surprising.
I like the potato idea, maybe like potato skins (similar to TGIF's, but better).
I never thought of it like that, but yeah, like potato skins, but without the skins and taking 2 hours to make!

We typically bring a side or an appetizer. DH has a famous buffalo chicken dip that everyone always asks for. What about a simple chili & some chips? That way you know you'll have some protein and ppl could have it as a snack or more of a meal. Or you could make some kind of appetizer pizza...
Pampered chef has an easy recipe you could use (I'm going by this off the top of my head so you may have to play around a bit w/ingredients):
1 pkg pillsbury crescent rolls for dough - take rolls apart and form into a circle, use rolling pin to meld together and then bake as directed to form the crust.
While baking, mix 1 8 oz pkg cream cheese and some dill (not sure exact amount) together....once crust is cooled, spread on top.
Cut up/chop a variety of veggies (tomato, cucumber, broccoli, onion, carrot, whatever you like) and spread over the top...
Quick, easy, and tasty! GL!
In order to avoid the insanity that was Leigha's guest who, despite knowing the rules, insisted on bringing a plated item to a finger foods/appetizers party, I would call and ask.
My go-to items are:
Pasta Salad, Deviled Eggs, Bruschetta and bread, French Onion Dip and Veggies
Hey, that wasn't me! I had the nutso friend who was gonna bring her dog (but thankfully didn't).
