Food Ideas?

We're heading to our bachelor friends' house for chili tonight.  We weren't supposed to bring anything to begin with but apparently the group grew so they asked if I could make something to add to the dinner.  I'm totally good with that... I love cooking and I have about an hour before work and heading over so I don't feel crunched for time. 

BUT I am totally uninspired right now.  The main food will be chili and cornbread.  Someone is bringing coleslaw and someone else like me is just bringing whatever they feel like.  I can't decide what to make.  Any ideas?

  • My vote would be for a large green salad or some corn on the cob.

  • Dessert maybe?  Brownies in a box are quick and easy.
  • A large green salad with lots of veggies.  Or some buffalo chicken dip with fritos....yummo. 
  • Salad was the simple trigger my brain needed.  I have a huge bag of spinach from my brother (he's out of town for a month and didn't want to take it with him Smile) and a box of fuyu persimmons.  I saw a recipe for Persimmon and Arugula Salad that I can modify that to use all the spinach.

  • I see fuyu persimmons at the farmer's market, but what do they taste like? I'm intrigued!
  • I'm honestly not sure how to describe them!  They're kinda sweet and a tiny bit spicey?  I'll eat one and pay more attention and try to describe it to you tomorrow.  Smile  They're different and definitely worth trying though!

  • Persimmons!!!  They must not grow in Florida.  They are EVERYWHERE here right now.  It's cool because all the leaves have fallen off the trees but the fruits are just getting ripe so you have all these little pumpkin-looking fruits hanging from the otherwise naked trees. 

    The hard varieties (Fuyus) are great for just munching like you would an apple or with salad, cheese, etc. 

    The soft varieties are great for baking.... kind of like if you made an applesauce or pumpkin cake or bread only a darker, sweeter flavor.

  • Hmmm...we just had persimmon pudding last week.  I can't wait to see your review of the salad.

  • Do you have a recipe for the pudding?  I have some soft ones that are almost ready and I want to try to make pudding sometime this weekend.

  • Ok, can't find the recipe I had.  However, this recipe is how DH's aunt makes it, and it's really good (just supa sweet).  The recipe I had substitutes honey for some of the sugar which cuts down some of the sweetness, imo.  Maybe the guy I got it from will be at the farmer's market this weekend.
