What the heck - mushrooms?

So the boy went to Costco and brought home not one but two giant packages of mushrooms! I have no idea what to do with them -  any ideas?  Soup or stew recipies?

  • make stuffed mushrooms for new years! I just get sausage and mix it with some italian bread crumbs. Take the stems off the mushrooms and stuff them. Cook for like 20 min on 350

  • Ya know, sauteed mushrooms (onion, butter, garlic) are an excellent side dish to almost anything, but especially steak.  Romantic steak dinner?

    (On this recipe though, substitue onion for leeks, sour cream for half and half.  No need for exra dill for the garnish - it's good without it.) 

  • Emeril's wild mushroom soup recipe is awesome!  We sub different types of mushrooms if we're unable to get the different varieties and use veg broth instead of chicken.  Also, we generally freeze it so we can use it later in casseroles (and not buy canned mushroom soup).

  • Add a little beer or hard cider when you saute them.  DH discovered this on a whim one day... SO GOOD!
  • I love making sauteed mushrooms, onions and garlic with butter and then adding in a little cream at the end.  (and sometimes dried sage) If you add the cream at the end, it sorta thickens up and you can put it on chicken, porkchops, etc.  NOT a good for you food though for sure.
