Feeling uninspired - meal ideas please!

Preferably with a minimal amount of ingredients, cheap, easy and fast to prepare and generally healthy for us.

I'm having a hard time making our menu for the week!

  • This week we're having chili, vegetable soup in the crockpot, chicken caesar salads, and turkey melts with soup.

    This week we are having:

    BLT's, chips, veggie
    Tacos, salad
    Kielbasa, pierogies, veggie
    BBQ Chicken, baked beans, veggie

    And breakfast for dinner is always a fun option!

  • Crockpot Salsa Chicken is extremely easy and we love it:

    Grease crockpot and put in boneless/skinless chicken breast

    Mix together 1 jar chunky salsa and 1 can cream of chicken soup and pour over chicken

    Cook on low 6-8 hours and serve over rice pilaf

  • Salsa chicken is my go-to fast and easy supper:

    Cut chic breast into bite size pieces, cook in a sprayed frying pan. Turn heat to medium and add frozen corn once chicken is cooked. Then add salsa (we use most of a 16 oz jar), chopped/torn black olives, jalapenos if you like spicy- cook until everything's warmed.

    Add shredded taco/nacho/jack cheese to the pan or individual servings. We sometimes eat it rolled in whole wheat tortillas, or in bowls with tortilla chips. It takes like 15 minutes, all ingredients are kinda eyeballed, to your liking.

  • I'm making a cranberry pork roast in our crockpot this week, it's ridiculously easy.  Take any hunk of meat (I'm using pork shoulder), put it in the crockpot with one diced onion, 2 tablespoons of soy sauce (I will probably skip this), and 1 can of whole jellied cranberry sauce.  Cook it on low for 6-8 hours.  Done!
