What is (was!) for dinner?
I know this post is a couple hours late, but I wanted to AW the Eggplant Parm I made! I had it completely ready when DH got home from work, which never happens. I'd never made it before, and we both enjoyed it. For dessert we had fresh fruit smoothies which were good as well, we're trying to be better about our dessert choices are defaults are usually chocolatey.

That sounds great, I've always wanted to make eggplant parm but have been pretty intimidated since I've never cooked eggplant before..
And I'm way late but last night I had Panera soup for dinner (since I was at work.
)
