I typed up this big long thing and hit submit and it said "user not found" Whatevs nest! I haven't had probs w/ pm before. Anywhoo...here's my response for the world to see!
I don't really have any Vegan ideas since I'm Ovo-lacto vegetarian. DH isn't really vegetarian, but we tend to cook that way. We usually do boxed meals w/ a vegetarian twist. Like Mac & Cheese w/ veggie crumbles. Or Hamburger Helper w/ veggie crumbles. DH really likes the morning star Chik strips especially w/ pesto. We'll also do casseroles and but some kind of veggie "meat" in it. Morning Star came out w/ some Italian Sausages that are very tastey and we use that a lot. DH made a veggie dressing for Christmas w/ it (based off his mom's recipe and sub'd sausage w/ veggies sausage). A package of the crumbles = 1lb of meat so its easy to substitute it in general recipes. We're not to big on recipes (unless its sweet stuff) so we just kinda throw stuff together and try it out. Sometimes we'll do scalloped potatoes, limas, I'll eat a veggie burger/chik pattie and he'll heat up chicken fingers.
And I put cheese on EVERYTHING. Its very important.
Sign up for Morning Star emails and they send you recipes and ideas as well as coupons. They also have a lot of recipes on their website. Some people prefer Bocca, but I just don't like the taste compared to morning star. If there's a Whole Foods near you, they have a much larger selection on veggie substitutes. Being vegitarian in Alabama hasn't exactly cought on, so there isn't a lot of variety compared to other places. I hear Trader Joe's has some good stuff too.
I have a volunteer that has an EXCELLENT vegan chocolate cake recipe and I'll see if she can send that to me.
