Baked Mac & Cheese side dish ideas

Today is C's bday so I'm making him homemade baked macaroni and cheese. Kind of a weird birthday dinner, but he was kind of craving it last week and I never make this kind of food, so it's a treat.

What do you usually serve as side dishes for Mac & Cheese? (Something meat-free.)

  • I would go with some sort of veggie since it's carb heavy meal. Does he have a favorite?
  • I wouldn't say he has favorite vegetables - he just has ones that he tolerates. ;) Fine, that's not entirely true, but I'm allergic to the veggies he likes most.

    I was thinking maybe spinach. But hopefully something a bit different than what I usually do. (Saute with garlic and olive oil.)

  • I would do a salad... something light.  Roasted broccoli maybe? 

    I dont really eat side-dishes with mac & cheese unless the mac & cheese is served as a side dish.  I think if I'm going to make it and indulge, that's pretty much it for me.  I do throw cauliflower or broccoli into the recipe a lot though.

  • I would do a light green salad. A recent favorite of mine is mixed spring greens with shredded carrots, shredded beets, and sesame seeds dressed lightly with lemon juice, olive oil, and balsalmic vinegar.

    I also LOVE broccoli and/or peas whenever I eat Mac & Cheese. I usually just mix them into the M&C directly, but steamed on the side would be nice too.

  • I'll try just throwing some peas in there and calling it a day. Less work that way anyway!

  • Mac and cheese sounds so unbelievably good right now, yummmm

    I'm friends with everybody in this office. We're all best friends - I love everybody here. But sometimes your best friends start coming into work late, and start having dentist appointments that aren't dentist appointments. And that's when it is nice to let them know that you can beat them up.
  • I've seen a couple of places that add tomatoes to their mac and cheese.  I've never had it because I always have mac and cheese as a side of something else, but it may be worth a try
  • We had baked mac & cheese last night and I did steamed broccoli on the side.

  • I think broccoli goes well with Mac & Cheese, but C might leave me if I made it for his birthday. He really hates it and might even be a bit sensitive to it.
