I'm having two girlfriends over for dinner tonight. One just got engaged on NYE, and we all haven't seen each other since before Christmas. So, tonight is a girly-gab fest, but it's also our "Christmas" celebration with one another.
For a main course we're making Manicotti. One of the girls is in charge of bringing drinks (Champagne and Red Win). Now, I'm trying to figure out salad and dessert, and I need help!
Task One: SALAD - I'd like to do something that compliments the "italian feel" of the dinner, but not a Ceasar. Just a mixed greens of some sort, but beyond the traditional bag salad. Any ideas of what to mix in?
Task Two: DESSERT - There's only three of us, but I also don't mind making something big. The only catch is that it's 1:30 p.m. here, and I've got to have these done by 4:30/5:00ish. I suppose the dessert could be baking while we eat, but I do need something low-prep.
Any help/suggestions (preferably within the next hour!) would be awesome!

For salad, my current favorite, which is also really fast and easy to prepare, is romaine lettuce, cucumber, fennel (looks like celery but has a bulb that looks like an onion on the bottom), and avocado with olive oil, lemon juice, S & P (and, optionally, Italian seasoning). The fennel is a bit licorice-like and it's kind of different and way healthy. Include the leaves for flavor and because they're healthy.
I always either buy dessert or use a mix, so I'm not a ton of help. But what I love: bake the prepared cookie dough and make ice cream sundaes with them.

Salad... think Olive Garden house salad - romaine lettuce, red onion, black olives, banana peppers, parmesan cheese, Italian dressing
Dessert... do an apple or pear crisp, add some cranberries if you want to dress it up - its super easy to do and takes about 20 minutes of prep time to peel and chop the fruit.

I love me some caesar salad, so I'm probably of no help there.
In a pinch, you can do a cappuccino trifle (aka, poor man's tiramisu). I made this super quickly for my biffle's christmas tree decorating party, and everyone loved it.

I didn't pipe rosettes, because I don't know how, lol, but I used a can of whipped cream and did overlapping dots. It looked really cool and it was tasty!

I decided to go with a cake mix for dessert -- I was too lazy to prep anything, and I had one for a cinammon spice cake I've been wanting to make. I'll let you all know how it turns out.
Hawki, your Olive Garden suggestion was perfect and it actually inspired what I'm making. Our trio's fave italian places are Buca di Beppo and Macaroni Grill, both of which make a spinach/red onion/goat cheese salad. So I'm making that!
