Poll: what's your "easy" meal?
If you don't have a meal plan or much time to make dinner, what is your go-to meal? What do you make when you don't have anything else in the house? What do you make when you're feeling uninspired?

ours is egg tacos (scrambled eggs + tortillas + sour cream and salsa, things we seem to always have on hand), but I'm getting kind of bored of it since we've been turning to it a lot lately.
With a little bit of time but no energy, I pour marinade on a pork tenderloin and pop it in the oven. The tricky part there is the sides - usually ends up being rice and frozen peas.

2-minutes: Beefy tostadas w/ soy meat crumbles, black refried beans, and cheese in the toaster oven, then add tomatoes and lettuce.
30 min-1 hour: Celery Chicken. Salt, pepper, flour and cook three chicken breasts in butter (I know- I use Smart Balance at least) while its cooking add 2-3 stalks of chopped celery and 1/3 of an onion to the pan. You can either eat as-is or add 1/2 cup of water and bake for 30 minutes. Serve over brown rice.
Lazy chicken spaghetti- add olive oil to the crock pot and throw in three chicken breasts. Cover with a jar of spaghetti sauce and other odds and ends that you add to spaghetti. Crockpot 4-6 hrs on low, shred and serve over wheat pasta noodles.
DH is SO tired of my sides- I either steam frozen organic green beans (resealable bag) or broccoli. Every now and then we'll pick up swiss chard or something like that from the grocery store, but I don't like peas or lima beans and apparently corn and steamed carrots don't count as greens.

Spaghetti... I always have pasta, sauce, ground turkey, onion and carrots to throw in there. Mmm that sound so good right now!
When I'm on my own for dinner... my go to is some Chipolte!

I make a bunch of flywife's Beef & Bean Burritos, and keep them in the freezer. Those are great to take to the office for lunch, or eat for dinner.
I'm glad you asked this question! I'm reminded that my freezer stash is currently non-existent, and I need to fill 'er up again.

Absolute desperation: Turkey burgers with canned green beans
If I'm just feeling uninspired, I'll slice some onion and flank steak and stir-fry them with a little garlic, ginger, and soy sauce and serve over rice.

DH will frequently have pasta with olive oil, shredded cheese, and garlic for dinner when he is feeling lazy and I'm not home.
We both do nachos as a backup. It's also a good way to use up odds and ends that may be going bad (leftover beans or meat, leftover cilantro or onions, the end of a bag of spinach.) I will bring that to work as well and always get comments. When I use a lot of spinach I think it's healthy (at least healthier!)
Quesadillas and tomato soup in the winter.
Of course I also keep soups and frozen pizzas on hand for this as well.
i call it Pantry Pasta. cook any kind of pasta i have in the house (i think ziti is the best). while the pasta is cooking in a skillet i add whatever i have in the pantry that sounds good (here are some ideas to pick from: olives, might cook some chicken if i have it, sundried tomatoes, salami, capers, artichoke hearts, mushrooms, etc). while the pasta drains i melt a little butter in it's pan until it starts to brown and add in some olive oil. season it. add in the fixins and then add in whatever cheese i have (usually some parm and then cheddar or mozz).
its so easy and yummy and usually only takes as long as it takes for the water to boil and the pasta to cook.
