Woo...first menu of 2010!
It has now been 2 years since I started doing these menus. I cannot believe that! We've been fortunate that, in all that time, there have only been a handful of 'flops'. I know I have done it sporadically in the past, but I've decided that for 2010, I am going to let you know each week how much that week's dinners cost. So, here's the first week of 2010:
Monday: Crock Pot Lasagna w/ garlic toast;
Tuesday: Leftovers;
Wednesday: Layered Meatball Bake w/ salad;
Thursday: Leftovers;
Friday: Soup and sandwiches.
Dinner cost: $63.06

I think I am going to make a bunch of crockpot recipes this week since I'm at home this week. (When I make crockpot during the work week sometimes they are overcooked after 10 hours, lol) I will have to find some recipes, and post!!!
I am going to try semi-low carb as well and low fat, and maybe high fibre. We really want to lose the holiday weight ASAP :P

Only problem is, I have a digital crockpot, so even if the power is suddenly turned on, the crockpot won't actually turn on until it's set (some buttons need to be pushed). Bummer huh? I wish there was a built in "do not start until... " timer in my digital crock pot! I don't want to bother buying another crock pot.
Andrea - in the summer look for one at a garage sale. You may be able to get one for cheap (even a small one) that you can use on a timer.
This week we are having the following
Monday - pork chops, salad
Tuesday - spaghetti and homemade meatballs
Wednesday - English muffin pizza and salad (Joe's request for comfort food)
Thursday - Baked potato soup
Friday - Meatballs subs
Saturday - Fajitas and mexican rice
I love when these are posted, I get a lot of ideas of here!~!
Monday: Chicken Corn Chowder (will freeze the rest, we have been stocking the freezer with stuff for when baby arrives)
Tuesday: DH birthday dinner: sausage, perogies, cabbage rolls
Wednesday: Homestyle meatloaf, smashed spuds and broc
Thursday: leftovers
Friday: I am on my own DH is out of town for the weekend so I will most likely have something yummy with DS.
Saturday: Same as Friday:
Sunday: Dinner at IL's FIL's birthday dinner
I love this! I am vegetarian (well pescatarian actually since I eat fish as well) and my husband LOVES meat. I'm having trouble figuring out dinners for us each week night. We tend to eat a lot of fish & pasta but I'm finding that sometimes I'll make 2 dinners to meet both of our needs (or I'll just eat cereal for dinner).
Does anyone have any good vegetarian dinner recipes that they can share? Or recipes that I can use tofu or soy-based products?
This is one of my biggest struggles in my new married life.

We did that. ?I just quit eating soy after 16 years of being vegetarian, to see if it was leading to my IF issues, so I started eating chicken last month. ?(It's really strange, and I don't like it!). ?I just ordered a subscription to Canadian Living to help me get some new meal ideas.
But for vegetarian/carnivore meals we used to do fajitas (both veg, or chicken cooked on the side), veg. chili, potato soup with olive bread, pizzas loaded with veggies, oven roasted sandwiches with sweet potato fries (his was chicken with brie, mine was brie and pear), greek salad wraps, green curry with tofu, BBQ in the summer was easy, we had a veg side of the grill, and a meat side, so my food never tasted like burger. ?We did lots of bean salads, and then would toss them over spinach and add egg. ?
This is a great blog http://fresh365.blogspot.com and I had two years of vegetarian times magazines which were great for ideas. ?Dave got most of his meat outside of the house, with the exception of bacon, montreal smoked meat or chicken breasts which we always have on hand, but was mostly up to him to cook.
What helped us the most was nailing down 15 or so go-to dishes for dinner that we both liked, and then using that for most of our meal planning. ?He had a lot of vegetarian dishes he loved, and had no problem eating tofu (but drew the line at things like veg burgers/faux meats).

Thank you JanieJones! This is so helpful. The blog is a great resource too. All of your veggie/carnivore meals sound delicious (I'm really really hungry now....is it too early for lunch?!?). Fajitas are a great idea- Dave loves Mexican food. Right now my staple meals are tofu stir fry, veggie lasagna or salmon or tilapia with steamed veggies & rice.....so your ideas have really helped. I'm sure my husband will be thankful!
Tonight is his birthday so I'm off the hook for cooking but I'll start tomorrow!
