We didn't end up making the lobster last night (they were still a little frozen), so we're having them for dinner tonight.  I'll let you know how they turn out!

This is the recipe I'm planning on trying out (it's very basic):

Simple Baked Lobster Tails

Ingredients:

  • 3 fresh or frozen lobster tails (8 ounces each), thawed
  • 1 cup water
  • 1 tablespoon minced fresh parsley
  • 1/8 teaspoon salt
  • Pepper to taste
  • 1 tablespoon butter, melted
  • 2 tablespoons lemon juice
  • Lemon wedges and additional melted butter

Directions:

  1. Preheat oven to 375 degrees.
  2. Pour water into a 13-inch by 9-inch baking dish.
  3. Place lobster tails in a dish.
  4. In a bowl combine parsley, salt and pepper, and sprinkle over lobster.
  5. Drizzle lobster meat with butter and lemon juice.
  6. Bake uncovered for 20-25 minutes or until meat is firm and opaque.
  7. Serve with additional lemon wedges and melted butter.

    I have no idea how lobster fits in with clean eating lol.  But, I still am doing clean eating...or at least I'm back to it now that the holidays are over!

    That's where DH bought them--I think he said they were on sale for 50% off?  I remember he said they were about $5 each, normally closer to $10 each.  They're probably a medium size, but we'll have a few sides with it to make it a full meal (I think I'm going to make quinoa and some vegetables).

    Oh, ok.  I checked the new weekly ad and it doesn't look like they're on sale, but sometimes not everything on sale shows up in the ad.
