Figured I'd start a new post since I wasn't sure if you'd see me post to the one from yesterday..

The lobster turned out really well!  Cutting the shell to get the meat out during preparation was a bit of a pain, but after that it was super easy.  Came out delicious!  I plated it on a bed of Parmesan quinoa with a side of cooked vegetables.

    You can use it in place of rice for example.  It has a slight nutty flavor when cooked.  I like cooking it in vegetable or chicken broth to give it more flavor.  It's really easy to cook on the stove, and is very filling.  I like it as a side dish, it's great topped with shrimp or scallops (or lobster!).  I also really like it cooked with toasted nuts and dried fruit...it's kind of like a sweet side dish or breakfast even!  I buy it at Trader Joe's or Costco, but I'm pretty sure you can find it at any grocery store.  It's a very versatile food!

    Oh, and for dinner last night I just mixed in some fresh parmesan and garlic to give it some flavor to complement the lobster.  It was delicious!
