Tell me if this food is gross.

We have a family friend who has decided to make me a bunch of food so that I don't have to cook with the new baby.  Extremely generous but the food she cooks totally grosses me out.

Yesterday she e-mailed me that she made enchiladas in the morning and brought them to work and she could drop them off in the afternoon or evening, that they were in her car.  So here's what is:

A big pan with layers of black beans, tomato paste, soft flour tortillas, a little bit of cheese (and I mean a tiny bit), tofu (since I'm a vegetarian she puts tofu in everything, even though I rarely eat tofu).  And, there were big globs of sour cream on the top.  This is not really what I thought of when I thought "enchiladas".

It sat in her car all day (12 hours - she came by at 6pm), and I'm supposed to bake it.  I'm so confused.  The tortillas are soggy and gross, and there is sour cream piled on top.. I bake this?

I feel really bad but I tried a bite and it is foul.. she prob spent over an hour on this ... I have to save it in the fridge in case she stops by.. I feel so bad throwing out food but it is always like this, I can't stand what she cooks :(  Is there a gentle way to tell her not to cook more?  Lie and say the fridge is packed?  Would you eat this?

  • I dunno.. I make dips where you bake sour cream all the time.. and they're good. and enchildas are GONNA have soggy tortillas.. Its not like stuffs gonna go bad sitting in a car.. its 25 degrees outside!

  • While a fridge is ideal, I agree with Melissa that it's plenty cold outside to keep things pretty fresh.  It's not like there was raw meat in it.  Personally I don't add sour cream to enchiladas until after they bake, but you can definitely bake it.  And all the other ingredients are pretty much what is in them. It was really nice of your friend and I think it's very thoughtful she used tofu, even though she didn't know you don't eat it that much.

  • I agree with Melissa and Two- it's cold outside- the food is FINE. Heck- last night I didn't bother bringing in my leftovers that were to be today's lunch, nor did I bring in to work my dinner for tonight- they BOTH sat in the car over 10 hours- and will be FINE to eat. As far as her ingredients- it sounds like an "enchilada lasagna" if it's layered, but other than chili powder and onions- her ingredients contain the same things as mine do (I use chicken not tofu, and mix in the sour-cream rather than put blobs of it on them. but I also roll mine and don't layer them.) If you don't like the taste, try a little chili powder and it may help. As far as not liking any of her cooking- I'd thank her and let her know how generous she, as well as your other friends are, and tell her you won't have to cook for weeks- based on what has been dropped off so far.
