Kristen's Pepperoni Chicken

We tried Kristen "Kjohnson813"'s Pepperoni chicken from the FB cookbook tonight.  Yummy stuff!  We served it over macaroni noodles. High fives to Kristen for that one!

...Gotta lot of pepperoni left over.  Anyone have any ideas how to use it?  (Besides pizza?)

    My mom makes pepperoni bread. She buys frozen dough (white or wheat works), rolls it out, puts some egg and mozzerella cheese down (I don't quite know what the ratio is, but just enough to get the cheese wet...I don't usually put the egg in when I make it), then the pepperoni, rolls it into a loaf and cooks it at 350 on a cookie sheet until it is golden brown. 

    DH and I have made it as a meal before and dipped it in marinara, she usually serves it as an appetizer or finger food at parties :).

  • I make a pepperoni bake. Mix cooked rotini noodles with spaghetti sauce of your choice, alternate with layers of noodle and sauce mixture,  pepperoni, and shredded cheese (I use mozzerella but any kind you want works). Top with more cheese then bake at 350 until cheese is melted and its warmed through. Another quick and easy effortless recipe from the Mom of a Toddler Cookbook (aka, my head). :D
