Again, it's whatever I grab in the morning rush. Today its leftover spaghetti. Yesterday was soup and crackers.
I used to be good at making sandwiches the night before. I need to get back in the habit.

it's gourmet... tuna, rice cakes, and pizza lunchable. I snack throughout the day. I hate being in the office by myself all day. When others are here, I don't eat much at all. Luckily, this should be my last day alone for a long while!
I'll typically pick things up at HT or Trader Joe's on Mondas to stock the freezer/fridge at work. Its always a mix, but here are some of favorites.
Lean Cuisines or Kashi meals, english muffins, chicken salad, tuna/salmon cups, veggie burgers, soup, yogurt, hummus, carrots/celery, apples, PB, cheese & crackers.
Well, my lunches are undergoing a transition right now. My local organic farmers lettuce has finally frozen over, so I'm finishing up the stock I have--I think tonight or tomorrow's lunch will finish it. I used to have salad just about every day, but since switching the local organic, most of the other lettuce I buy tastes "chemical" to me. I may just suck it up and go with an organic, non local kind. My salads tend to have some different things in them, depending on what's on sale at Earth Fare, sometimes its red peppers, sometimes craisins, sometimes artichoke hearts, sometimes roasted red peppers, but it almost always has a nut--either cashews or almonds in it.
Today, I had a PBJ sandwich, and will have some tomato soup in a little while. I also had a little taste of chicken salad from work, and will have some other "samples" from our kitchen--they are trying some new recipes. For snack, I have 2 clementines, a yogurt, granola and some chocolate chips.
I try to mix it up so I don't end up w/ the same thing every week.
This week I've been enjoying salad. I bought two HUGE bags of Asian salad mix and a bottle of Lite Asian Sesame dressing and I've been having 2 bowls of it every afternoon. It is delicious.
The week before I had Mediterreanean pinwheels. They're fairly easy to make. You just take a wrap, spread some lite cream cheese over it, top it with some taboule, put in some sliced red/green peppers, a few slices of salami (or turkey), kalamata olives, wrap it up and slice it into squares. It's actually pretty filling.
