need dinner ideas!

Since this is my slow season, we have implemented a strict budget which means lots of meal planning!  Though I'm tired with my usual repetoire!  So list any dinner that you like that's easy to make - you don't have to do recipes, I can look them up online but if you want you can!

  • My budget is $100 a week, and that includes Britton's stuff.

    I meal plan too. Or as least I am really trying. ;)

    This week was:

    Chicken Wraps (Flatouts, ranch dressing, baked chicken, lettuce, tomato, cheese)

    Tacos (you know what goes in them)

    Artichoke Pasta (from Pioneer Woman)

    Hamburgers

    Greek Salad

    Lazy Chile Rellenos (from Pioneer Woman)

    I try to make stuff that uses a lot of the same ingredients.  Chicken was a big one this week. Lettuce and Tomato was used a lot.  And we have leftovers, so it will run into next week so I won't have to buy as much.

    Corn Chowder

    Stromboli - this you can change up how you make it.  Pizza version, lunch meat and cheese, veggies etc.

    Potato & Ham Soup

    Sometimes when I want new ideas for dinner I go to What's Cooking.  They have some idea recipes and ideas.

  • My favorite all-time dinner is pho. It's easy and cheap. Beef broth (best if you make your own from scratch) with ginger, star anise, clove, garlic, cilantro and lime served over rice noodles. Then you can add in whatever floats your boat. We use scallions, cilantro, mushrooms, mung bean sprouts, thai basil, lime, jalapenos and then you can get a small tenderloin and slice it super thin, put it in your broth raw and let the heat from the soup cook it. It's like buttah!  You can alter these ingredients to suit your taste. Oh and we like it because it's fun too.

     

     

  • Go through a cookbook and write down a bunch of recipes you might like to try. Then each time you do your meal planning, look at the list. If you want, you can compare ingredients to sales at the grocery store. We really like this method because it gets us out of the rut and on to trying different things. 
  • Garlic brown sugar chicken is my and DH's favorite!  I make it once a week.

  • Chicken stir-fry's are easy - you can always change it up for whatever meat and veggies you prefer.

    Cuban pork chops are my fave with white rice, and a simple salad.

    Sausage Pepper penne - copycat recipe from CPK...it's so simple and good. It makes a gigantic pot of food, too!

    Love the PW's artichoke pasta, too. I add Italian sausage, and I think Elisa adds shrimp for protein.

    I'm in love with pot roast right now...pot roast, mashed potatoes & veggies. Perfect fall meal. You can do it in the crockpot, too.

    Sloppy joes with turkey, or I'll make the sliders version. Use little buns instead of the big hamburger buns.
