Loaded Baked Potato Soup
4 big potatoes
4 tbsp. butter
2/3 c. flour
6 c. milk
1 tsp. Tony?s Creole Seasoning
4 green onions chopped
12 slices bacon, cooked & crumbled
1 ? c. shredded cheddar
8 oz. sour cream
Bake potatoes @ 400 until done (~1 hour). Let cool. Chop into bite size chunks (can remove skins if preferred). Melt butter in pan over low heat. Add flour, stir until smooth ( I added a little bit at a time) Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly until mixture is thick and bubbly. Add potato, Tony?s Creole, 2 tbsp. green onion, ? c. bacon and 1 c. cheese. Cook until heated. Stir in sour cream. Add extra milk if necessary. Serve w/ remaining green onions, bacon and cheese.
