Um. What should I make?

This friday night, my friend Julia and her fiance PJ are planning to come over to my place for dinner. She's budgeting for her wedding so I wanted to make dinner . . . But I don't know what to make. Ideally it'd be something I can either stick in a crockpot or something I can easily make in about an hour.

Do any of you have a "stand-by" dish for company? Last time I cooked for a friend I made a pasta dish with fresh tomatos, spinach, and sausage, but when I go over Julia's she makes something a little fancy so I wanted to kick it up a knotch.

    Good suggestions!  I'm all about make ahead food when company is coming over.  It's nice to just be able to stick something in the oven when they arrive rather than having to be in the kitchen forever.

    Parmesan crumbled chicken:

    6 tablespoons Dijon mustard 1 tablespoon white wine or water 3/4 teaspoon salt 1 English muffin 1 cup freshly grated Parmesan cheese 1/4 teaspoon freshly ground black pepper 4 tablespoons butter, melted 4 boneless, skinless chicken breasts 1. Preheat oven to 400?F. 2. In a shallow bowl, whisk together Dijon mustard, white wine, and salt. 3. Pulse the English muffin in the food processor to make bread crumbs. 4. In a second shallow bowl, mix together the bread crumbs, Parmesan cheese, and pepper. Drizzle the melted butter over the crumb mixture and toss until well combined. 5. Coat each chicken breast in mustard mixture. Then, coat each chicken breast evenly in bread crumb mixture. 6. Place chicken in a greased baking dish. Bake 35 minutes, or until crisp, browned, and cooked through. I am going to use Panko instead of whizzed English muffin. 
  • I always like a gourmet homemade pizza when we have company! I make one with mozz, feta, tomatoes and sausage.... Sooooo good!

  •  My stand by is definitely my chicken taco soup.  Its easily made vegetarian if you have company coming over, because the original recipe calls for beer as the base liquid, then just leave the chicken out, but I make it with chicken broth instead of beer and keep the chicken breasts in it. Its so easy because you just throw everything in the crock pot in the morning, you can even use frozen chicken breasts, and serve when ready! Its relatively cheap to get all of the ingredients together also! We rarely have leftovers when we serve it for company, but always have it for dinner a second time when I just make it for us.
