So DH and I would like to go on a mini-vacation with David this summer (after June 15th if that helps any). Where would you go with a toddler, knowing that it'll probably be another 2 years before we get to really go away again? (We are planning on TTC this fall). I will consider flying but please note that I am not a big fan of it and not sure how David would handle it.

Would you consider a cruise? There would likely be an endless number of things you could keep David occupied, but also enjoy for yourselves. (ETA: I googled "top family vacation destinations" and Good Housekeeping suggested a cruise or various types of boat vacation, like houseboats.)
What about South/North Carolina? I don't really know anything about it, but I'm going off of Kate having taken her gaggle of children to the beach and they managed well. Hershey, PA? Hello.. chocolate!
This summer you could do Wisconsin Dells, WI. TONS of waterparks with more than you can imagine for David - it's fairly touristy, but offers boat rides (a few different kinds) as well as water shows, etc. And you'd be able to drive.
We would probably need to get him a passport for a cruise, and that may be a little more than we are willing to spend at the moment. (DH's grad school bill was a nice little shocker).
David really, really loves Thomas the Train and all things transporation related. It would be fun to try to find a Thomas The Train railway thing. I thought they did that on J&K plus 8.
Well if David likes trains then why don't you travel Amtrack somewhere. Then he'll get to ride on the train and you'll also get a vacation out of it.
We just got Declan a passport and it's only good for 5 years and was a little cheaper then an adult passport. You could also look into one of those passport cards they have now to use on a cruise. They are much cheaper.
The National Railroad Museum is here in town, Melanie... they sometimes have a Thomas the Train that you can ride in, I believe. Otherwise, what about taking a trip up/down the Mississippi River? You could take a ride down the river in a riverboat. One of my CWs RAVES about Galena, but I don't think it was all that "kid friendly" since she described it as quaint. LOL
There's also a train ride or something like that in Northern WI.
