A while ago - and I do mean a long while - one of you ladies posted a crockpot chicken mexican recipe that I've made a couple of times. DH would like it again and I can't find it.
I think it had rice, chicken, black beans...corn maybe? It was spicy, too.
Anyone? Anyone?

Well since no one has answered you, I thought I would give you my soon to be step-dad's recipe since it sounds similar to what you want...
4-5 bonless skinless checkn breasts, frozen
1 15oz can of black beans
1 15oz can of corn
1 15oz jar salsa, any kind
1 8oz package cream cheese
Put frozen chicken into crock pot
Add beans, corn, salsa
Cook on high for 4-5 hours or until chicken is cooked
Add package of cream cheese (just throw it on top) and let sit for 1/2 hour.
This recipe does not have rice, but we served it over cooked white rice and it was delish!
