Hey everyone,
One of my new years resolutions was to stop eating meat. I am a huge animal person and in college I didn't eat meat and I felt great. I was apart of an animal activist group and fell out of it after I moved away. One of my biggest struggles is finding new things to eat other than the regular steamed veggies or salads, esp when going out. I have been doing great so far and I thought I would come here and ask to see any of your favorite vegetarian recipes or blogs that you follow for support? Thanks!

Out of curiousity, how far are you going with the no-meat thing? I know some vegetarians will still eat fish or chicken.. are you going all out? No meat?
If you don't mind meat substitutes, basically any recipe can be converted. However, I know some people don't like substitutes because how processed some can be. Personally, I don't follow any veggie blogs but plan to start adding a local produce, vegetarian recipe per week to my blog soon.
DH and I did try this recipe which uses no meat substitutes last week, and it rocked. OK, we made some changes--no eggplant, added roasted corn. Some of the other things we like to make are Tuscan pie with veggie Italian sausage crumbles, baked zuchinni (sp) with brown rice, salisbury steak (for realz) with mashed cauliflower, and any kind of bean soup. I can post recipes tonight after school if you'd like.
I don't know of any blogs offhand, but H and I found a really good recipe for vegetarian stuffed peppers in the crock pot that we make quite often.
It's black beans (one can whole, one can mashed), corn, sauteed onion, and salsa mixed together in cleared out green peppers. Top with cheddar or Mexican blend cheese and cook on the crock pot on low for 6-8 hours. Yummy and easy!
So far I think I am going all the way, no meat at all. I don't like fish, the only thing I do like is shrimp and I can only eat so much of it, MAYBE once a month or so. My friend is a fisherman and he wants me to try some fish that he catches fresh. I told him I would at least try it once since he is willing to make it and he is very excited about it. I really don't like fish though
I have really bad TMJ and it seems to be getting worse as I get older. I was supposed to have surgery when I was very young but they were going to break my jaw into 4 parts and I was supposed to be in the hospital for like a week, with my mouth wired shut for a month or so, and I was going to lose 20 lbs. My parents didn't want to do it so I didn't get it done. Now it is a pre-existing condition and my jaw is getting worse and worse as I get older. Eating steak, chicken, and chewy things usually kills me so I am also doing this for that reason as well.
Munkii, those sound delish! I would love the recipes. I am not a big fan of the substitutes. I just don't really like the way they taste. I tried some of those morningstar riblets the other day and they were flippin nasty.

this sounds yummy! I don't use my crockpot enough and this might be a stupid question but you're saying u stuff the peppers and THEN put them in the crockpot to cook? dont u have to have liquid in the crockpot? or do u put the stuffing in the crockpot to cook and then stuff the peppers after?

Yup, you only need cook the onion before, then mix everything together and stuff the raw peppers. Put them in the crock pot, no liquid needed. The peppers actually release a lot of liquid as they're cooking and they get nice and soft.
I was just thinking that! If you put all those ingredients in the crock pot and used it as a topping for rice instead of a stuffing. mmm...
I'm not vegetarian but I do cook alot of vegetarian dishes because it's cheaper for us. I am a big fan of allrecipes.com so hunt around on there almost every day and hardly ever use cookbooks but this one would be worth looking for used to help you get started...

This looks awesome! DH is a vegetarian and I'm not; I think we could both enjoy this!
So, I've been doing a lot of reading and I feel like anything can be transformed into a vegetarian meal whether you subsitute the stock being used, use soy meat, or subsitute the meat for vegetables. MorningStar has a version of ground beef that I use in pasta sauces, hamburger helper, soups, and so on. My husband's favorite meat subsitute brand is Quorn, I even enjoy them. The other day I made a pesto sauce, cooked the "chicken" and placed the it on a bed of noodles then cover in the sauce.
Look for the product Match Meats (matchmeats.com I believe). They are out of St. Louis and are AWESOME. They make a great meat alternative; everything from chicken to crab. It's all ground, so you can make it and shape it to anything. I used the pork and made a great pork loin my DH. They also give some great recipes on the site.
I've been trying my best to be creative with recipes and trying to track some new ones down. My husband says that I don't have to and he'd be happy eating frozen cheese pizza and mexican food every night. That's not going to fly with me

My husband's favorite is the breaded chicken with the cheese...it's gourmet for him! Not every grocery store carries the same product, which is a bit frustrating, but if I see it I buy it!
I'll have to go back and write that recipe down...I've been really good this past week by fixing something new everynight, so could be whats for dinner tonight. Damn, I've watching too much Rachel Ray.
Ok, here are two of the three I mentioned.
Tuscan Pie: if you don't like substitutes, just add veggies instead. We always add zucchini (sp), onions, peppers, whatever we have on hand--you must add the beans though. Also, we never use as much cheese as they have listed; sometimes we omit it all together.
I can't find the baked zucchini recipe, but basically you: thinly slice 4-5 zucchini and 1 small-med onion, saute. Add half jar marinara and mix. In bowl, mix 1 tub fat-free ricotta, 1 egg, and 1/4 c finely shredded parmesan. Top zucchini mixture with cheese mixture. Bake for 30 minutes on 350.
